The worst part: Sans effectively dooms the entire Underground (well, except for Disbelief Papyrus) by fighting the human so early. Sans is worth drastically more EXP than Papyrus, so by losing to the human early, he unintentionally allows them to reach a way higher level than what’s normally possible at this stage, basically putting the rest of the route until Disbelief Papyrus on easy mode.
Just gonna mention this, I just realized something. The requirement for LV 19 in Undertale is 49,999 exp, beating Sans gives you 50,000 exp. That means that Frisk/Chara would be LV 19 after Snowdin. That’s actually pretty broken if you think about it.
This is why sans doing the same thing despites remembering previous disbelief timelines basically dooms the underground Since he knows that he will lose but keeps trying All this will do is cause dusttale ( and likely dustbelief follows )
This timeline could branch off into several others,most obviously disbelief Papyrus,but also Dusttale as this could be seen as sans giving you one last chance before starting a no mercy run of his own

my theory is that monsters actually allow you to dodge the attacks, they consciously give the chance to be "spared".
sans is smarter than that, he knows chara/frisk would just try to slash since he already did that cheap move in another timeline.
