Hot Pursuit 2, Underground, Most Wanted, Carbon and Pro Street are still my highly rated racing games today. I'll throw in Hot Pursuit 2010 and The Run since those are the last best games I've played of the 'New NFS' series.
I love most of these games but Pro Street is the one I'd like remade the most. It was such a unique sim style game and doing wheelie competitions was a ton of fun.
Nfs Carbon Own The City has very different storyline and the setting location is almost the same as Rockport from Nfs Most Wanted but only the road network. Also the game is best known for it's first ever PSP game to include free roam unlike Underground Rivals and Most Wanted 5-1-0. So I think this game is the best since I haven't tried NFS Carbon yet 😍
The more valuable/special one for me is NFS4 (PC). A game made with love and passion for cars. Was a gem and is really the pure essence of what NFS is. Second ones NFSU1 and NFS2. And the last good one with those feelings, NFSMW.
Still playing NFS high stakes today! Something about that one always stood out more and is still fun to this day. But then again I've been playing games since nes and master system were the competing consoles.

The physics Actually sucked in 2012. It was more of a burnout game than NFS cause you're just drifting and crashing into things all the time.
