🔵 1938 Depression Era Jell-O Ice Cream Recipe

  • Jell-O in Ice Cream? Is it ice cream? Is it a Jell-O Frozen Dessert Recipe? Who knows… this depression era no churn ice cream recipe is pretty cool, and gives a snapshot look at a world just digging out of financial ruin - but running headlong towards WW2.
    Ingredients:
    ½ pkg raspberry Jell-o
    ½ cup boiling water
    ½ cup sugar
    3 cups milk
    1 tsp vanilla
    1 cup cream
    Pinch of salt
    Method:
    Dissolve Jell-o in the hot water with the sugar.
    Add the milk and the vanilla.
    In another bowl whip the cream with the salt.
    Fold the whipped cream into the milk, and freeze.

      you can get milk in bags in America as well, but it is primarily used in food service. They come in 5 gallon bags for use in refrigerated milk dispenser machines in both regular and chocolate.

      Iirc, it's not uncommon in the EU. I also think he was adding warm milk (at least the second bag) to the hot concoction, and that wouldn't help the folding issue.

    Didn’t turn out right because you needed to chill the jello/milk mixture so it would thicken enough that you could successfully fold in the whipped heavy cream. I’m guessing that the recipe left out this step.

      bagged milk is basically same as the milk in dispensers at restaurants/ convenience stores.. it's just milk , same as American milk.. from a cow

    Having some experience with old recipes, I would suggest that there are a few obvious things that need to be done with this recipe. I say obvious because with this style of recipe the author assumes the person preparing it knows to fill in the gaps ( how could they not right?) but 80+ years later people aren’t cooking much at home and haven’t been taught how to cook in general. So what is “understood” in this recipe is that you first fully dissolve the jello powder in the boiling water, then you fully dissolve the sugar. Then add the milk and let the jello set. You were on to this in the video when you didn’t feel right folding whipped cream into a liquid. The mixture has to be set befor you fold the whipped cream in, then you freeze. If you do it this way you should get a much creamier result. Good luck!

      Exactly what you say is correct. Most women HAD to know how to cook in the past, thus it was assumed they would have some common sense about cooking. Alas, though, common sense, in general, is lost in the current era.

      I only just found this vid and only found this PDF a few days ago: msuspcsbs_jell_geneseepur55.pdf (7923) "The Greater Jell-O Recipe Book" (c) 1931 G. F. Corp. Nearly every recipe says 'Chill. When slightly thickened, fold in...' I didn't know that some of my favorite recipes dated back that far, like Under-the-sea (pear) salad.

    I grew up on Jello Ice Cream and loved it. My grandmum & mum made this every Sunday. The packages of Jello must be smaller now because I remember my mum using a full box. I'm so happy to see you making this. Also, ours was very creamy but my mum used to refrigerate the jello mix before folding in the whipped heavy cream.

    When I've made ice cream without a churn, I still needed to take it out of the freezer a couple times and whip it up before it fully set. Otherwise, it was very icy and dense.

    Ah, it’s a real treat to see this recipe! My family still makes this for every party. We never claimed that it was “ice cream,” however. We all just said it was the “secret family Jell-o recipe” that was passed down through generations.

    Even as a Canadian myself, I can say this channel is absurdly Canadian. From the tone, to the Leafs jersey, to the bagged milk, to the obsession with butter tarts, to all the videos off-handedly peppered with Canadian history facts/references. I was happily taken by surprise by an off-handed reference to The King's Daughters on the last video of theirs I watched. I've never even heard mention of it outside of a single Canadian documentary I watched. It's a nice break from all the American content that tends to dominate the English-speaking internet.
    Edit: Just noticed the denim apron. Although I've never seen or heard of one before, it also seems right at home in the land of the Canadian tuxedo.

    My grandmother was born in 1928, she made this recipe all the time. It became a favorite at our large family meals. Later in her life she skipped the milk, and added a softened half gallon of vanilla ice cream directly to the set jello and whipped them together with her mixer. Then put it back in the freezer to let it set. I still make it that way today when I want a nostalgic recipe to remind me of her.

    I’m an Aussie .. I made what they call Flummery here in the 1970’s . It had jelly crystals and evaporated milk . Kids used to love it 😊
    You dissolved the jelly crystals in boiling water then added the evaporated milk and beat it till really frothy . Put in fridge and there you have it ! A light fluffy desert.

    My family makes something likes this quite often. I wouldn’t call it ice cream. Seems more sorbet like.
    We use while jello pack, freeze so it’s stiff, shred with fork. Then fold in cool whip.

      Yeah it'd be interesting to use full cream and no milk. If the gelatin supposedly makes it more creamy, then imagine normal ice cream ingredients with gelatin added in too, it'd be double creamy. I like experiments like that. It's like the whole using frozen carbon dioxide crystals to flash freeze ice cream, supposedly making it way more creamy than normal ice cream as the ice crystals have no time to grow big so they're smaller than even normal ice cream. Imagine that carbon dioxide method with full cream AND gelatin, for a triple whammy. You may get the creamiest ice cream on earth

    I was shocked when I moved to Germany in the mid 70s & milk came in quart boxes on the shelf, no refrigeration. Now we have it here in the U.S. soooo I am never surprised at anything.👀🙃 I love snow ice cream but snow is too polluted now.😝

    My aunt used to make something like this. She didn’t freeze it and I believe she just used whipped cream and jello and it was very well combined. It was called fluff and she grew up during the depression. It was fantastic!

    My grandma said they used to take it out halfway through the freezing time, beat it through with an egg beater then stick it back in to finish freezing. Said it helped a lot with reducing the ice crystal formation.

    You should have chilled the jello. Let it get solid after it got solid I would have whipped the jello. Then whip the cream and fold all together.

    See, I would try the recipe again but this time waiting for the gelatine to thicken a bit first. A lot of jell-o salad recipes and gelatine recipes of the period you have to wait for the right point of thickness otherwise it's too slack for the other ingredients which either float or drop to the bottom. It's not necessarily the recipe, but a loss of the then common knowledge.

    I made this yesterday with cherry flovored Jello and waited a little bit for the mix to cool down before I put in the whipped cream and mine turned out really creamy, a good recipe for the summer time

    My Mum used to make a dessert using a packet of jelly desoved in 250ml boiling water and adding a tin of frozen evaporated milk and would wish into a beaten cream state then refrigerate. It was delicious

      The cream would have been hand whipped and the temperature in the house is probably higher than what it would have been. I have no idea why he didn't think to give the jello way more time to rest

    My mom made this in the 70s with cherry or lime jello and vanilla ice cream and it was DELICIOUS!!!! She basically made jello and while it was still liquid stirred in scoops of ice cream. i’ve been meaning to try it again.

      Everyone calls it jello salad, but that is just jello and whipped cream and whatever else you add either fruit or marshmallows(yuck).
      But this is definitely not jello salad, instead of adding cold water you add milk and stick it in the freezer instead of the fridge.
      Sounds good though, I will be trying this.

    My mom use to make this when I was young, it's end up more like a sherbet or Italian Gelato than a traditional ice cream, but is absolutely fantastic. Glad to have found the recipe.

    Omg . I have been telling my husband for years about this ice cream jello, my mom used to make this for me and my 9 other brothers and sisters, Back in the sixties, now I’m gonna make it for my husband, thank you for making this👍❤️

    I’m obsessed with vintage Jell-O recipes, so I have to try this. I’ll see if I have this in any of my vintage Jell-O cookbooks, I have quite a few. I’m gonna make this, raspberries are so delicious.

    Every question about milk in a bag
    Our milk came out of a real live cow, several dozen of them. Had to go out and milk them by hand not machine like they do today

      Did you just imply that fake cows exist?
      Also last I checked when I milk goats I don't bag the milk, we just milk it straight into bottles for the babies or into whatever were gonna keep it in before it's pasteurized.
      Idk maybe cows are different, maybe real cows come with their own plastic bags for milking. Unlike goats that apparantley don't have built in plastic milk bags.

      Pft you milked by hand? We use to just go out and suckle straight from the cow until the farmer shot at us.
      We lived in a box car.

    2 things-
    1) even though they used more milk than cream, the milk they did use was probably full fat, rather than the reduced fat you used.
    2) you might have had better luck folding the jello mix into the whipped cream in a very thin stream. The break down/over liquid saturation would have been slowed. But, also I'm surprised the directions didn't suggest the jello mix be cold. It isn't ideal to have such large contrast of temperatures when mixing a "whipped" anything.

    What a neat milk bag holder, we have creamers in bags here in the States. This is one of those recipes that probably can’t be rushed, I do agree it does leave out some needed information. The Jello Ice cream still looks good. Thank you for sharing

    Delightfully charming! Always! I used to know about an strawberry ice cream recipe using coffee cans. I would sit on the floor with the children and we would roll the can to each other. The rolling of can would churn the ice cream. The ingredients were simple and no gelatin required. I lost this recipe so many years ago and I've forgotten how to make it. When time allows, perhaps you can find this recipe and make a video? This recipe would bring family and friends together. Children will remember this recipe fondly. Thank you!

    I read the article on cup(unit) in Wikipedia. It really opened my eyes, and was worth a read. So many different measures of cup in so many countries, and so many changes! Thanks for mentioning that about the change in Canadian cup measures.

      We used to have bag milk in kaitaia, it was very handy and cheaper than plastic or tetra oak, also I've seen cafes in Wellington with bag milk in recent times

      1 cup [US] = 0.8327 cup [imperial]

    I don't quite go back to 1938 (born in 1937), but in early 40s in rural Indiana, Grandpa made ice cream in a hand cranked bucket with ice and salt. Almost nobody back then had a freezer big enough for a tub of frozen anything. The other Grandma still had an ice box for a refrigerator.

    One summer as a teen, I babysat three kids all day. One day I found this recipe in a cookbook (no whipped cream though) and decided to make it as a treat. But the baby cried upstairs and my attention was diverted. I left it going in the stand mixer while I went up to see her. When I went back to the kitchen there were mounds of whipped gelatin in the bowl and falling out onto the counter. But the kids loved it. I think I use lime jello. It was either a Betty Crocker or a Good Housekeeping cookbook - in the late 50's.

    This stuff is great .try all the flavors. I use a large jello packet and i use 3/4 cup of hot water.Use the best vanilla ice you like .( dont skimp) pour hot water in jello dust and stir while your microwaving the ice cream down to a liquid.now pour together in a large glass pyrex rectangular dish. Put in freezer for about a hour to 1 1/2 hours. You can also add marshmallows or real fruit

    This basically like a dessert I had as a kid (in the 90s) which was jelly (jell-o) and evaporated milk whisked together. Really nice.
