My parents made their own sausages. We had 8 kids and hanging sausage everywhere. Upstairs, downstairs, basement. Life. Just life.

I love the hams hanging from the ceiling. Very Euro. When I was in Croatia, a lot of houses had an extra story on top with both sides open to hang hams, laundry, herbs to protect them from rain and storms while letting breezes from each end cure or dry them. I always thought that was awesome.
I have been watching homesteading channels for many years but i am so glad you have stayed true to what homesteading is. others have gotten as big as their channels and they no longer have the same spirit they had when they started. Keep being you, please, we need it

If you want to remove the farmhouse, I recommend picking it apart to salvage whatever good materials are in it.

Hey I totally agree w/your double dig method. Heavy clay soil properly amended & loosened is great stuff cause it still has good mineral content. And now your root crops have a chance to put down roots & grow unrestricted. Well done!
I agree 100% and if that system works for you why knock ✊ it. Obviously your family back and supports this system. I do think Justin’s new book 📖 covers everything including how he trains and grows the ROOTS of growing a good stable marriage and family. In Spain, certainly when I was there a few years ago, it was common to see bars festooned with hams hanging from the ceiling, each one with a plastic cone shaped drip collector screwed under the pointy bit of the base of the ham. I googled "whole jamon serrano hanging in a bar" images and there were loads of pictures.
Totally agree with slowly about your double digging and amending heavy clay soil. The only thing missing in the kitchen is dried herbs, onions and garlic hanging next to the hams. Love your videos.

It would be so cool if you built a barn with a living area above where the boys can graduate to as they get older and want their own space. 2 birds 🐦 1 stone. Housing for animals and chiddlers!

Every Italian deli up north has these hanging everywhere. They hang cheese too.
I double dug all my flower beds when we moved into our first house, in our twenties. Added sand and peat and compost to our native clay. That soil stayed fluffy for twenty years. I added mulch every year, and that was it. It was still fluffy twenty years later, when we sold that house!
That is the height of fashion & extremely good taste !!!!!!
That hanging in your kitchen will make a great conversation starter during the holidays. As for the "Old Man stash", when cleaning out my dad's workshop after he passed. We found a box of various as sundry screws, nuts, bolts, etc; with a label on top which read "Barely too good to through away".

I remember these hanging in kitchens in my younger years. In fact the ceilings all had permanent hooks for the job.💕💕🌻🌻
Please cover your hams with cheese cloth or muslin. It will allow air but keep the flies out. Need to build a small smoke house for storing/hanging meats.(in the winter when you have a little down time🤗). Thick walls keep it cool during the hottest summers. Make sure the hams in the cottage are not hanging so mice, rats,raccoons etc can get to them! I grew up on a small farm in NC. Love watching you guys!

We use to have hams and sausages hanging in the kitchen farm curing .
This was my grandma and grandpa farm in France , slicing at demand for lunches and supers.

Hey! If you can hang herbs, you can hang prosciutto!
Double digging, makes the soil light, airy, and perfect. There's no right, or wrong way of mixing the soil. If you're getting it done, and you like it....then it's perfect. This afternoon, I picked up compost from a local farmer friend, and will need to add it to my raised beds, along with some more peat, and till each garden box to make sure all is mixed well.. I'm just waiting for the ground to dry a bit. There's a little evidence left of snow...and plenty of sloppy red clay. Once it dries, I'll be able to get up to the garden boxes and get them ready for veggie seeds, challots, asparagus, and strawberries. I've also started seeds(tomatoes, peppers, and some medicinal flowers inside my house, and put the grow lights, and heating pads up on them. Have you started seeds early? How about sweet potatoes slips this year?

Don't forget to cover the cut end of your prosciutto with lard mixed with red and black pepper to keep the bugs out. Traditionally you wash it with vinegar and then cover the cut end. Good curing.
Interesting!!I grew up on a sheep farm in the 80s. We cured sheep “ham” ( I don’t know what you call cured sheep leg/butt 😂) we let them hang on hooks from the ceiling in a unused bedroom on the second floor.
Covered the windows with thin curtains and nets. My grandfather said that the meat should stay out off strong sunlight.
The legs hung in loose linen or cotton bags to protect them from bugs.
We never covered with anything else that I can remember.
I’m not sure that hanging meat to cure in a kitchen is the best thing ,as there is a lot of steam and food smells that can taint the curing meat.

This is what I do and I am 60 years old. I do it for 2-3 years until bed is full and fluffy. It is labor intensive. I just do one a day. The only difference in my method is that I put lots of leaves in the hole before all my compost and then the old beautiful black dirt back on top. They grow like crazy. 👍🏻👍🏻👍🏻👍🏻

My 2 cents is walk on top of the dirt to squish it down a little. Thank you for explaining the rooted life. I know his channel well but for some reason I didn't get it. Or understand the content. Justin should for sure thank you. I will look into buying it now. I so wish I had an acre of land. It's my dream to have a homestead.

I have food hanging from the ceiling, however it happens to be a banana hanger and some onions in a basket.
If you hang them over the sink they can drip? Might be too much moisture though.

I too have subscribed a long time ago to the Rhodes's channel. They are so very friendly and yes people are attracted to them. When possible they teach as an edutainer and people listen. And I am at 80 yrs. old in love with the daughter Lilly. Even when she was only 7 yrs. old she was milking the biggest animal on the farm and pulling a stool up to the stove to cook. I know that you folks are part of his inner circle and who knows you may be mentioned in his book.
Yes, it was a lot of work, but you will not regret having double-dug the beds. I did it to mine, but also used hardware cloth to screen out stones and rocks. (Our area of Olympia is nothing but clay and glacial till!). Kudos! Best wishes, Kate

It is very hard work but only needs doing once.
It matters not "how others do it", looking at your fluffy, healthy soil is what matters! So many folks have very viable ways of doing things, none more right or less, it is simply about the best end result for the person "kissing the cow" 😂 (an old saying that I hope is not lost on you)

In Little Italy ,NY They hung them in the shop after having them hang in the back, after drying stored and we got to see it cure for the entire year
My husband helped me put up a 12-w x 20-L x 8-foot-tall metal garage to be used as a feeding station for my goats and where I can store their hay for the winter. With the ice we have had this winter the feeding shed was a blessing! We didn't install the front panels because I wanted it open on the inside of the goat's yard. With the metal panels we didn't use on the front of the feeding shed I cut them in half, length wise and screwed them to 4x4 posts the height of the panels and made raised beds with them. Last month I started collecting dead and decaying wood material from our woods to help fill up the beds. I have been gathering up composted leaves and soil from various areas of our property to finish filling the beds so I can plant in them. We also purchased a lawn Vac from DR Power so that when we mow, we collect the grass and leaves to be used as mulch and to turn into compost. Here in Cove, Arkansas our soil is clay and rock with lots of fire ants...! Topsoil is maybe 2-3 inches deep if that.

God I just love you two! You set such a great example. You appreciate what you have and aren't suffering from the MORE syndrome. Always wanting MORE. Bigger or better. I'm surprised that with all ur metal skills, u've never built one of those big squarish, metal frames for hanging pots and pans from the ceiling, over ur island. U could hang ur ham from it too. Great job how u guys do everything. Truly a thumbs up.
That was a interesting process with the beds. I understand lots of labor involved but if you only have to do it once it's not that big of a deal.

For some reason she reminds me of John Wayne in that movie calling Katherine Hepburn(?) sister lol. He had to get her safely across the country and she was spunky the whole way lol. The raised beds look fantastic! Seems like back in the day they built smoke houses for the meat to cure in. I think it would be a good idea to use some lumber from the old house to add onto the trailer. Trailer is all new wood. ✌🏻
I would take that kind of morbid anytime , especially for the out come of deliciousness to come.
I'm not even sure how I came across your channel, but I am homesteading vicariously through your family! My area has restrictions on having chickens and my neighborhood restricts fencing, which limits even planting opportunities. I've been doing what little I can and being thwarted by squirrels so for the time being I've decided my next best course of action is to support local farmers at the farmers market. Love your channel and I've really been enjoying your journey.

OK I have decided that Ben was born with a brown thumb LOL some people have a white thumb for baking ,some have a green thumb for gardening ,but y'all's beds of soil can be Graded as Gold Standard of soil quality. Your soil actually looks edible, rich dark like a Grade A chunk of chocolate .👍. 🤷 I'm hope I'm in North Carolina next year so you'll let me sample your prosciutto LOL hey the hams you got hanging in the kitchen why don't you suspend one of those bus tubs underneath it it looks like they'll both fit until the moisture stops just an idea but I'm so jealous. Consider wrapping in cheese cloth or cheap linen light and airy. Keeps flies from laying eggs on your beautiful pork!
A restaurant we go to hang their hams in something like a hutch. That way it has screens on the doors to help keep bugs off the meat while it's curing

I remember double-dug when we had a house in the desert. It was the best soil in the neighborhood after we got through.

I got the itch today to dig around in dirt so I tore apart a corner of my front area and planted bulbs. This is just the start of a new look in my head I need more bulbs to honor some dearly missed cats I put out there. One cat decades ago gave me a surprise rose bush where I had placed him. All my other plants have to be in pots. I have that California clay crap. So in my head it’s a memorial to my furry pals.

Hey Guys the best way to get rid of termites is a 1 gallon sprayer with 2 cups of 20 mule borax and filled with hot water spray under the house and all around the foundation and on each side 10-20 out bury a a piece of unprotected wood with just the top barely sticking up but before bury it soak it in the same mixture as above. I live In SC and this has work for me going on 20 + years now. this was giving to me by an old Farmer that knew his stuff.

We added on to our house when we were little and a large pile of dirt was left in our backyard! We played for hours on that,and little roads and villages! Have you thought of adding on a big front porch across the whole front side of your mobile home by the trees? I would surely do that,give you a big porch and screen in an area as a sleeping porch in the summer for all of you! I've always dreamed of a sleeping screened in porch!
It's a bad farmhouse but, it's an awesome shed.
If you don't get good crops after that tried and tested double dig then you never will. I am retired and that was the method my Dad taught me and his Dad taught him. Who needs a gym when you have a veg plot to tend to. Thanks for posting

I'm so glad you answered the farmhouse question because I've always wondered why you didn't use it as a soap shop or guest space. I hadn't realized it had termites 😓 Would you ever consider tearing it down and putting a pre-built shed in its place for Bumblewood and extra canning storage?
I think what you're doing there is fabulous. Count your blessings that neither you or your spouse have to work outside the home.

You do what's best for you. It works for you period!
We put them in a dry cellar, hung in a screened (3 sidesat least) cupboard or at least a muslin or cloth bag over it. If the look of it is not your preference. And keeps out any insects.

Looks great - up here in New England it is still mostly below freezing, and we still have a goodly layer of snow on the ground. Can't wait to start prepping my raised beds!!!

I did the same thing with a bed in my garden. I hired a guy with a rototiller for an afternoon after trying to do it myself. Such good results and so many worms. Almost time to go at it again.
First, I have to rearrange the chicken coop and rabbit pens. Small apartment backyard farm.
I will be 72 in a few months and I started double digging just about 5 or 6 years ago. I turn over the soil in early spring. Spread fertilizer all over it and turn it all over again. Since then I have not seen any tomato worms. It is hard work, but worth it. Good job!

Let people comment away. It was great to watch, the soil looks very rich. I’m in Australia and currently every where on the east coast is flooding. I’m up high on a hill but my garden is on steroids, my beetroot is bigger than baseballs and the radishes as almost as big. But sadly my carrots are warped and funky shaped. Absolutely loved seeing your son playing with Buggy. Love buggy.

Hey you do you. As to the old farmhouse… lol. As soon as you first showed it on your channel I knew was a tear down. I was born in East Tennessee and have seen many of a house like that. Too much, just way too much money and labor needed and then would never be right.
That's the thing... if you don't just tear it down... it will NEVER be right. It would take far more time.. and materials to try and fix.
Just START NEW when you can... and THEN it will go fast and you'll have something sound & worthwhile.
I usually double dig new beds too. My grandpa taught me to water it like I had planted it and get any weeds from the seed bank to germinate - then terminate them and cycle that way once or twice more. Then last frost rolls by and you're good to go. Thanks for the videos.
