Morning Don, haven’t tried much oolong although the nug potion was more than worth the wait and have been enjoying each sip. I’ve been getting lots of use of my new flute brewer with the white samplers. Cheers to you, Celine and the Mei leaf team as a whole.
I got this tea before getting to watch this video. Over brewed it when tasting, treating it as a regular oolong. It acquires an almost minty quality to my palate. I will try to drastically decrease the brewing time, as you suggest... It's a very complex tea. Even over brewed it seems to last forever, too!
I've been prowling around this tea's page since Wednesday last, thinking I might wait till today's tasting. But yesterday I broke down and now I'm really ready for it. This sounds enticing. I've been following this with Baked Goods and then another time with Shifu's Pudding ... very interesting. I just hope customs will be reasonable for once and, please, wave my order through. 🙏
Would the process of again unrolled oolong be the same. For example a rock tea like shui xian? If a person were to want to do that at home, any recommendations?

The Taiwanese would beg to differ, since they are an independent country for 80years. Having their own government, culture, money etc. etc. It‘s obvious that you are only parroting CCP propaganda, who make an imperialistic claim on that sovereign nation. Gladly that will not happen anytime soon.

Are there anything about aging of the red teas and also what can you tell about storing the puerh in the vacuum bags, for their fermentation as well?

Somehow, I never really heard of a aged oolong before… Probably because oolongs can be pricey and aging would put that at “prized collection status”.
So basically if you buy a vacuum seald fresh oolong and simply keep it in your livingroom for 15+ years, you might end up with some good aged oolong ?
Have to light re-roast. That type works best for a few months to a year
