Novice at best here, even after 10 years of playing with smoking. I wonder if the cold smoked, is better than the hot smoked, is evaporation. In theory, the hot smoked piece is cooked twice. The cold smoked only once, in the pan. I wonder if you weighed each piece, before and after, if there'd be a difference. Just a thought. Nice video, TYFS
Wow 7 days of smoke I have heard for smoking for that long but never tried it! Most I have gone is 12 hrs 😂 but think it has something to do with the amount of smoke to the volume? Sounds amazing! I probably smoke about that ever year as well just not all at once

Pretty sure hot smoke will lose more wait but after frying it's all going to be a wash. But I just love my cold smoke bacon

I cold smoke only. 7 day smoke with hickory. 110#'s this year. Let it in air for 5-7 days
