Wow I never knew put shrimp paste in the PP soup is the original recipe. My mom told me that PP noodle soup is Chinese-Cambodian noodle soup. I don't believe Chinese use shrimp paste in their cooking only Thai and Khmer.

Sometimes I'll add crab cut in halves. You can say they substitute for the shrimp paste. For the ground pork, I would give them a stir fry with garlic and shallots instead for boiling it.

There are so many different ones. Which kind did you use or what's the brand on the package? Also, you must like your soup spicy 🌶 lol my two best thing about your soup is the pickle pepper and ( don't think I didn't see it) the fried dough stick ( in khmer -> cha kwhy) I think that's how you spell it lol. You can skip the roasting of daikon and carrots part. LOL. and you don't have to use all the organs. You do need the dried squids, sweet radish, onions, and dried shrimps. These are the essential ingredients to the noodle.

Carrots mix with white radish ( chhai thav) is not good fore health. You put that much chhai pov plus sugar it will be very and very sweet ( too sweet).
