    Ingredients:
    Serves 6 - 8 pax
    Mix (A) together and deep fry them until 80% done.
    Then fry (B) and add the cooked prawns towards the end.
    (A)

    360g of prawns
    1/2 tsp of salt
    A few dashes of white pepper
    Half an egg white
    2 tbsps of cornflour
    (B)
    -----
    200g of Chinese leeks
    1 whole red onion - sliced
    20g of chopped young ginger
    5 cloves of chopped garlic
    10 pcs of dried chilli
    1 tsp spicy broad bean paste (amzn.to/2ZOY3Lc)
    1 tbsp Chinese fragrant spicy chilli sauce (amzn.to/2QoVjBj)
    1/2 tsp pounded green Sichuan peppercorn (amzn.to/2ZM51km)
    1/2 tsp pounded red Sichuan peppercorn (amzn.to/2Fllvqg)
    2 tbsps Chinese cooking wine (Shaoxing Huatiao wine) (amzn.to/2QIlHoB)

    Great dish! I would love to try this! Most Asian recipes we see here in the USA call for corn starch. May I ask, when you say "corn flour" do you actually mean "corn starch?" I rarely see corn flour in recipes here. I think there may be a difference in nomenclature between the UK and USA. Thank you so much for the outstanding video!

      Hi Yanti. Dried chilli is preferred but if you can’t get it, the sauces used should still be able to make this dish yummy. I wouldn’t recommend fresh chilli because it adds a raw taste to the dish. Hope this helps.
