About the alternatives to sugar, there are these cola, pineapple or pretty much fruit flavours that come in sachets and in powdered form. They are called Jossy. These are used locally in place of sugar but since I personally don't like refined sugar and these flavours tend to be too sweet, I get cane sugar(paneer) which is a more natural form of sugar. It's isn't processed and a little can be added during the boil to give that natural sweetness. Secondly, when you do this again, use the peels of very ripe pineapples. They are more yellow in color. They tend to be sweeter and less tangy. Your prep wasn't bad at all and I enjoyed watching. 🤎🤎🤎

So why I think you had to soak first with water is just to rinse off dust and sand. It doesn't need to be hot water. Just wash off with clean tap water and sieve out with your hands, discarding the water with settled sand in it. You can also sweeten with dates.
Well draining the zobo is to wash/ do away with the dirt, you could actually pick them out next time before u proceed to wash, I love that u put a lot which will definitely make it smell and taste nice. You can also add the sugar and let it cook all together if u want.
You can use brown sugar to sweeten it. Gives it almost an earthy taste. But you should try just zobo and cucumber. It'll give you Chapman vibes. And we're waiting for your night time routine :)

Honey won't give the mixture that delectable sweetness and definately add some honey flavouring to the drink. I think sugar, if anything, is the best sweetner I can think of. Every alternative adds some flavouring making it better or worse. My say on this is using the sugar is best and an unhealthy treat once in a while wouldn't be of long term detrimental effects.
We call this "sorrel beer" in the my Caribbean island. Rice is added so it can be fermented. My favorite Christmas drink. Im definitely gonna try this method.

you did well but washing it takes off that blood red collar, use more pineapples for taste so you don't need to add honey, and there's a food cooler I usually add for that deep red colour incase you decide to wash it

So you can jam all your flavours at once in that pot, no need to blend if you dont have time, it will still simmer. Sieve after few mins boil and you're good! Some consider the first wash a waste but it's ok because the leaves are sometimes sandy, so the type of wash you do quickly is to pull out the leaves out of the water into another container si the sand remains at the base. First time I made zobo I was shocked how much honey I had to use. I was also trying to be healthy lol. Next time I used brown sugar. It gave nicer sweetness

Zobo is naturally very sour, it’s take a lot to sweeten it. Dates or date syrup is also another option. Some people use flavoring aswell usually vanilla or strawberry. I don’t like sugar personally.

Fun fact the last time I made and drank chapman I nearly ended up in A & E as I had some Fanta left over and drank that through out the day and later on Chapman and ended up with trapped wind😳. I was awful. My stomach swelled up so much I joke you not, I looked 9 months pregnant🤣, laughing now but it was painful and scary👀.
