Pat O's is in New Orleans. Spent a good portion of my life there and always enjoyed going to the Quarter and visiting that bar, and others. Nothing like strolling down Bourbon St. on a warm evening sipping on a Hurricane in a "go" cup. Your story is essentially correct though (San Francisco? Really?) Lots of recipes out there, inclusion a mixer from Pat O's, my favorite being with Fassionola syrup, which unfortunately these days is unobtainable,
Ha yeah. I get many mental blocks while filming! As soon as I stopped I said Nola! 😂 Fassionola was simply a blend of Fruits with Passion Fruit at the base…so was never a proper thing. Simply a blend you can make yourself. 👍
Hey Steve, any tips on getting cocktails out quickly? I have a home pub/bar and my daughter wants me to throw a cocktail afternoon for her friends, 7 in all.. we have an order of what we are doing but needing to get them out quickly 😱😱
Batch what you can in advance, then pour and shake. By trade, I'm actually an Event Bartender. So my thing is speed. My skillset is serving 100+ people in 10-15 mins. but it's very different processes to High Street Bartending. You adapt recipes. So to bang out 100 mojitos in 15/20 mins... you're prepping, Lime/Mint/Sugar/Rum in advance...then its just adding Ice and a dash of soda. Something like the Hurricane is super easy too... 3 ingredients. Batch in advance... then when coming to serve...it's just a quick pour of 120ml mix, shake and serve. Takes mere seconds. But its all in the Prep.
By the way...7 people is nothing. There's zero need to Batch anything there. The only thing you really need to do is maybe Cut/Juice Fruit in advance! But 7 people... they're only gonna be drinking 2-3 drinks an hour.

When i head to Bath for drinks, i always ask for a Hurricane but hardly anywhere is able to do them - i guess the passionfruit puree isn't that well stocked around those parts. Could you use Passoa instead? I also could have sworn Trailer Happiness in London did a blue Hurricane... probably completely wrong 😄
The big difference between Passoa (Liqueurs in general) and Syrups/Purees is the sweetness. Even though Liqueurs are "Sweet", they do not have the sweetness of a Syrup or Puree. They are not interchangeable in that sense. So any Liqueur will need a lot of balance adjusting with Sugar to get even remotely close to what a Puree or Syrup can bring.
Ha. Thats actually my Pina Colada glass! So standard 13oz ish. All my Hurricane Glasses are set aside for Cocktail Masterclasses. Hurricanes are the bigger ones…so 16oz ish.
