Looks awesome! My brother just sent me about 10 pounds of halibut from alaska. I'll definitely try this recipe. So far, my favorite way to eat halibut is with a good beer batter & a dill sauce I made. I know, people say it's a waste of a good fish, but that's how I like it. Thanks fellas!
I made this at home, and it was fabulous! Making it again tonight! Thank you for sharing it with us. We love halibut, and this has become my husband's favorite way to prepare/eat it!
Great presentation, most people including myself have no idea what fresh caught Halibut tastes like. It's not quite the same as the stuff we buy in the seafood section at out favorite market. Believe this when I tell you a Chef on an Ocean going vessel knows his craft! Chef Mike this dish looks outstanding! Just a side note good quality Halibut can be found at many of the better supermarkets. This is not a fish you want to screw up, by not cooking it properly! Slow and easy that's the way to do it, slow and easy. Buy fresh ,Eat fresh ,Be fresh!
OMG, ready to cook up a 14 oz chunk of Halibut flown into Denver yesterday afternoon from Alaska. Can't wait to pan fry it with butter and veg. oil, salt & pepper and maybe some lemon. Yum!
In response to the negative comment below..That is not smoke it is boiling water on the stove. This recipe is fantastic. I am a big rosemary fan. The salsa is a fabulous fresh touch!
I love the fact that, at the introduction of Chef Mike, Skippy peanut butter is visible in the cupboard in the background. That said, I am going to try these techniques.
Tried this tonight - GREAT - I went a little longer after searing took pan to 600 Degree Grill and then flipped. Turned out very moist, perfection - Love the Topping as well, went with herb medley rice, and broccoli with fresh garlic. To the flour I added a cilantro/onion/garlic powder mix, and onion powder with dried chive, and crushed fresh rosemary. - VERY VERY GOOD.
Here is something I PROMISE is important. If the oil starts to smoke, it has been destroyed and you need to pour it out and start over. My neighbor DIED from inhaling too much oil--a form of cancer you get that way. IF you wear glasses and see any oil forming up on the lenses, that is another indicator--be careful when you fry, I for one have done it wrong, wrong, wrong for too many years.
I love love ur halibut fish dish ❤one question how did u papare ur brown rice with cranberries cashews that is a must try dish my teast buds r dieing to try this meal
I love halibut!!! Have been cooking fish with a lot of thai herbs , my thing at the moment which is handy as I am living here and making my videos here too >>> Yum...good post
I like fish cooked and not medium rare. I cooked yellowfin tuna and it was dry and tough. How about the Halibut? Will it be OK or will it be dry and tough if I cook it through? Anyone know?
First time I see a cook/chef using canola oil versus "extra virgin olive oil". I've always questioned people using evoo ON EVERYTHING, FOR EVERYTHING!! Different oils for different applications is best, no one oil can do all jobs but, evoo sounds cool I guess ;-)
Canola oil is great for frying fish, it's not about the flavour of the oil it's about the flavour of the fish. Guessing that halibut had a higher iq than you
This recipe is perfect. Followed it couple nights ago. Fancy? With rice and all the shit talking. Why don't you spend time eating canned tuna. half of you probably can't cook.well done what an ignorant comment go to the supermarket and get some Gordons fish sticks and leave fresh fish cooking and eating to fisherman

Now that's 5-star food right there. Fabulously cooked fish by a worlds greatest fish chef, fabulous presentation of that fish on top of fabulous rice with at least 3% wild rice mixed in. Wow. That 5-star rating, is that out of a possible 900 stars?
I made it exactly how he said and it was the best fish dinner, my husband loved it.

Beautiful! Halibut is one of the best Alaskan foods there is!

Looks great! Good tip on the oil smoke point. Med rare- perfect. Halibut overcooked is tasteless and dry. Thanks for sharing :))
Halibut is so good
My go to flour garlic powder. Paprika , hys seasoning salt dash of pepper.the paprika has a lower flash point so don’t over cook or or burn.
Fresh halibut alone taste amazing. If I season it, I would keep it simple with sea salt and Macadamia nut oil 👍
This is the absolute BEST recipe for halibut I use follow this every time and everyone I’ve ever made it for dies over it!! Thank you ♥️
That’s a lovely piece of fish 👍👍👍

I'm going to bookmark this video. Didn't catch any halibut this year. Will try again next year.
If you're ever in Juneau, Alaska, try the Halibut at the Breakwater! Or ANY of their DELICIOUS seafood! Their King Crab Legs are AMAZING!

Edit: I sell seafood. I show this video to everyone that buys halibut

I am going to the store now, thank you
The best chef in the world eh?
And what was the flour mix??
How do you make rosemary flour? Do you grind fresh rosemary? Do you use dry rosemary?
Yes, just add fresh rosemary
Great job guys!!
Really nice vid. How hot was that oven?
Chef said oven at 350.
I would use avocado oil it has the highest smoke point and it tasted the best

Smoking oil is not cancerous. Certain oils have a different burn point.

Great Job!!!
omg that looks good!
Chef in this video is so cute! =)

The second I heard "pineapple black bean salsa" I stopped the video and ran outside to sleep in the woods.
why ?
@@thesage1096 because Pineapple doesn't belong within 10000 miles of a pan fried halibut steak
When fish is fresh you don't need a recipe. Cook fish.. Eat fish
Huge favourite in California. We broil it with a little butter and lemon or lime. It has a beautiful taste on it's own.
Chuck W
When fish is fresh you don't even need to cook it.
Oh yes...just skin it, throw it in and eat bland meat. Great idea. That good ol sea freshness. lmao no.
Dave Petronovich: Can you say PARASITES? OMG🙄
You don't even need to cook it if it's Sushi.
Awesome!
what about coconut oil
Nine recipe, do you know how many calories this would be around?
He cooked this fish medium rare. I cannot eat raw fish. I would cook it longer so that it is done throughout the fish.
some people like it pink
Pink halibut is probably fine. Pink worms, NO. ^^
they put them in freezers negative 100 degrees f. my house freezer goes only to 0. i'm not eating that pinck shit
How about showing how you made the salsa?
what surprises me is how people r praising that little skill set as if putting salt and pepper and frying it medium rare is a big deal .....
best chef in th eworld eh, haven't traveled much then. canola oil sank him immediately, i'm gone before the end

Grape seed oil has a much higher smoke point than canola.
Been nice if you had taken a fork and opened off a piece to see how it is cooked.
All I have for lunch is a tuna fish sandwich….Now I am just pissed off….LOL
Do you have chilli cheese fries?
Canola oil? C'mon. I'd use cannoli before I used canola for a beautiful halibut.

You have to come to Setúbal to eat the best fish
Looks good but I couldn't watch the whole thing because of the sound of the engines. I'll look for the recipe.

he should use a small pastry circle to dress the rice in the center of the plate....
Portion for kid ?
idk why i was expecting a burnt fish when he was about to flip it...
idk but halibubu tastes good even without all that fancy seasoning and cooking techniques
...fancy techniques? He seared it....

I watched this to learn how to pronounce halibut.
What were your choices?
I probably thought it might've been HA-li-but with short vowels.
@@RogerWazup007 like hay-lie-butt or -boot?
Butt was my first guess, and boot was my second, probably.
Going for butt before boot is usually good advice
did you wash your hands?

anthony herrera who said it's bad for you? The tv? The government? Brain washed?
Canola oil???? Say it aint so.
I might deglaze that pan with wine and butter.
