You'll need: 1 shallot, finely sliced 1 beetroot, peeled and cut into matchsticks (we used a Chioggia variety) 1 courgette, peeled into thin ribbons ½ a fennel bulb, finely sliced ¼ of a cauliflower, very thinly sliced large handful of finely sliced red cabbage, 50g mixed salad leaves 300g cooked chickpeas, we use bold beans salt & pepper for the dressing: 150g Kefir yoghurt 2 tbsp olive oil 2 tbsp cider vinegar small bunch of parsley 8 - 10 mint leaves 1 garlic clove, finely chopped for the rye croutons: 4 slices of rye bread olive oil To make the croutons, preheat your oven to 180°C /Gas 4. Tear the bread into small bite-sized pieces. Throw them in a roasting tray with a little oil and a sprinkle of salt. Bake for about 10 minutes, turning occasionally, until golden and crisp. Remove and keep to one side to cool. To make the dressing, whizz all the ingredients together in a small blender and season to taste with salt and pepper. Alternatively, finely chop the herbs and whisk everything together in a small bowl. When ready to serve, throw all the veg together into a big mixing bowl with the chickpeas, croutons, and a light seasoning of salt and pepper. Toss, and divide between plates and then spoon over the dressing to finish. You can mix the dressing directly into the bowl if you like but we think it looks more striking when added at the end. This recipe was from riverford organic I added the chicken … I used organic chicken breast x4 and marinated in pataks tikka paste and left in the fridge for a couple of hours if you could leave overnight that would be great . I cooked them in an oven proof dish at 180 for around 45 mins and served on Greek style bread warmed in the oven … enjoy ! x
Been working in my garden too and emptying my compost bins onto my veg beds ready for spring. However our hens roam free during the day in the veg garden and are always keen to help me when doing compost! Keeping 5 hens from munching on all the worms can be a fighting battle. Loved the farm shop haul! We have no farm shop near us so its really interesting to see what you buy and what you use it for. Loved the meal it looks scrummy. I also enjoy watching you garden. Id be interested to know what you are cutting back and growing sharon as i was very late to gardening, so im always looking to learn from others. I know so many people have there own way but i enjoy learning from you. You know i adore your garden. Ive watched it on Instagram for many many years. So much inspiration as its beautiful! It was the Japanese anemone it goes quite twiggy and looks messy 😅 so just having a tidy I have lots in the grown that will re grow at most cottage garden flowers I buy are perennial ( come back each year ) so just having a tidy and feed the soil .. but will still last new seedlings 🌱 once they are ready like foxgloves and hollyhocks that kinda thing xxx

We eat them or give them to friends family .. neighbours and I pickle them too .. we have around 18 girls now some we hatched ourselves and some we have rescued and some bought .. we have a few that are at least 7 years old not laying but we adore them so just running around .. we used to have ducks but they ruined the grass .. but if we ever move with more land I will definitely be getting more ☺️
So lovely, I wish we could smell the flowers, in that shop. I see in your fridge? still in their container, Take them out, and put them in glass jar, with their top, You will find, they will be as fresh as the day you brought them, yes even a week later. if you dont believe see, keep one or two, in the same way as you brought them, and one or two in the jar, Iv done this for years, when i first heard about it, i was B/S, but then i had egg on my face. LOL
Having access to the beach, do you ever bring home seaweed for your compost? I've read it is a wonderful addition. I've enjoyed spending some time today watching you puttering around your cozy cottage, beautiful garden & gorgeous girls. But, I am abit concerned about you feeding them cake with chocolate icing! Chocolate is poisonous to cats & dogs, don't know about chickens.

And I agree giving the girls cake isn’t the best idea but it’s not often and to be completely honest it was the first chocolate cake I normally do sponge or lemon drizzle.. but thankfully that are all ok 😅 thanks for watching xxx
