      Do you have to refrigerate the sauce afterwards or can you place it on a shelf after shrink wrapping? Just wondering if the peppers need to be fermented first?

      @@kelso2377 You can only shelf them if you pasteurize in a pressure cooker. Otherwise refridge is necessary

    Man!!!! I made this with a couple tweaks. I added fresh garlic cloves , and some pineapple and roasted all the peppers , onion and garlic in my cast iron over my smoker. Was the best sauce i have ever eatin!👏👏👏 Thx for the ideas.

    Love this video. I made this with a little bit of variation. Omitted some ingredients because of sourcing, allergies, and preferences, added some for "depth of flavors". I must say that you inspire me to make my own instructional videos. Kudos to you my friend.

    When I was in my early 20s I worked in a Mexican restaurant. I rotated through all of it, server, bartender, prep cook, line cook... One of our favorite things to watch happen to newbies was their reaction after we DIDN'T advise them to wash their hands BEFORE they take a piss! 😆

    I do one similar, except no tomato. I use mango pineapple juice and two mangos with a little honey. I strain mine. I just makes it easier to bottle and use.

    I just made this batch just NOW! And... Man! It is delicious! Thank you for this recipe! Instead of using molasses, I used spicy honey made by Firebee Honey. It added more sweetness to the flavor. The heat is there too! Awesome recipe! Thank you, sir!!!

    I took nice tomato drizzled it with olive oil and salt. Then roasted in my broiler till it blistered and darkened a bit. With a little honey and garlic added it was amazing!! The rest was the same as what you did.

    Wow i just happened to come across this video and I have to say this looks like I NEED to try this sauce. I love heat the hotter the better but it has to have flavor and it is very hard finding a sauce that contains both. They either taste like vinegar or they are all heat no flavor. Thanks for this recipe have to try it ! 😁

    How do you sweeten this up

      You can add molasses. That's the best bet but be careful, more sugar can create a fermentation process after it's bottled (sometimes we actually want that but not for this recipe) so you need to make sure it's heated consistently and thoroughly (140F+ for 15 minutes) and that the pH is balanced when it's bottled or you could end up with hot sauce bottles that explode when you open them, or worse... make you sick.

      The reason I ask is because I want to use this as a wing sauce .. I got brace and added a couple items .. added a few strawberry’s . Tablespoon fresh honey and quarter cup of apple juice.. I’m low heat simmering now.. flavor is amazing

    I'd love to try your hot sauce. One question. If you use garlic, should you cook it first or just add it into the processor?

      Our personal postion is that heat brings out flavors in almost all things, so even though either way will work well, we would suggest tossing it right in the pan with the peppers in whole cloves and letting them brown up and soften with the rest of the mix.
      If you've ever eaten roasted garlic, you know exactly what we mean. It's an amazing flavor!

      This one is what I consider medium hot, you can definitely add some ghosts into the mix to drive the heat up. Their smoky flavor works well with this blend

      Actually tried my hand at making a Scotch Bonnet mustard based BBQ sauce a while back and it turned out pretty well. It just wound up and little too thick and I screwed around and messed it up by adding more vinegar to thin it out a bit. Can't wait to try and make this one though.

      Whoa.... that actually sounds really delicious. This sauce tends to be on the thicker side, especially after it's refrigerated. If you like a thinner sauce, I recommend processing for a longer time and thinning with either spring water or fruit juice (Apple if you like sweet, Grapefruit if you like traditional).

    I love hot sauces. Last year some with serranos and jalapenos. This year im working with a variety of the world's hottest. Looking to make gifts sets with a range of heat and flavor.     looks great! i hate sauces like franks and tabasco, they just taste like spicy vinegar with no depth at all. Currently eating a quesadilla made on my own cast iron skillet, its my baby i never wash :p

      I'm a HUGE cast iron fan. This one has seen enough acidity that I probably should reseason it but, I hate losing that "real cooking" season just to have it be more consistent.

    Had to pause at the mango cutting part. There are, as you said, a lot of ways of cutting mangoes in harvesting the pulp. And you chose the messier way.😁 Try the method using two knife slices and scooping the mango flesh with a glass or a cup.

    This is mild more about favor than heat Buy a big bottle of Louisiana Hot Sauce and a big Bottle of Valentina Extra Hot Salsa JUST MIX EM BOTH UP TO GATHER! GOT THE BEST HOT SAUCE THERE IS> So good on every thing with out the tears of pain> mild heat with popping favor FAST, VERY EASY TO MAKE under 5 bucks> I cant grow pepper under 5 bucks, all the water, fertilizer, all the bottles and things to make it

      Never tried mixing those, I'll have to give it a whirl. Valentina and Louisiana hot sauces are both really great tasting hot sauces but they are about the mildest hot sauces on the market. You're correct, this sauce isn't that hot either. It's probably about 50,000 SHU as I made it. About 2 1/2 times the heat of Valentina's hottest variety, their "Muy Picante" sauce. Tons of flavor though. We've had a bunch of our community make it and actually crank it up a notch with their own twists.

      He hee i I was late this yrs buying fresh pepper, missed out. So i bought some Louisiana Hot Sauce, i tried to fine the hottest next one it Was > Valentina. Extra Hot > no tears of joy, So i mixed all to gather, omg the favor . and On chicken eggs sausage , every thing with just a lite heat > can eat it all day long. I really stubbed on this and its is awesome good

      Just don't be an idiot like me and forget to open the windows and get some really good ventilation going on if you pan-roast habaneros. I choked out our family cat. I forget that I'm used to it but it definitely is like low-grade pepper spray.

    Take mango pulp and spread it everywhere.
    Cut pass the big seed not against the seed so you'd end up with two sides and central seed. Use a table spoon to scoop pulp out or at least remove rings. Voila

    Nice, remove mango, add jalapeno, serrano, Anaheim, garlic and tomatillo, creamy mushroom, milk and cheese and you have my wife's con queso dip... 🤔😊

      Anything with a PH level below 4.6 is shelf stable. Vinegar has a ph of around 2. Also to note that by boiling the sauce at the end this kills the bacteria and the the sugars as well. Im sure the ph reading is well below 4.6. You can buy a $10 food grade ph meter on Amazon to test. Be sure to calibrate it.

    You just cut the mango into two halves close to the seed. Then you can easily spoon out the flesh. No need to dirty your hands.

    Where are you I'm in Toronto I'm interested in your sauce I usually make for cooking so itale ghost papper Carolina reaper jinger, garlic,lemon juice same amount put all together crush them in smooth pury add vinegar and salt put them to simmer slow top of stove bring it to boil themn fresh grind cumin for Indian fleverful then fill-up the bottle I make thich hot sauce I use in cooking flever test amazing I can spread evenly in tortias to make raps in lunch makes ammazing light fleverin cooking onle apes size amount changes the test and flever of food not hot spicey but very fleverful my family only I can barely heat not all members so for me I use separate so you don't have to buy garlic ginger or papper easy going with testy food hope you like it

    Don't over cook the peppers. My sauce came out tasting roasted or burnt which I didnt like.
