mead is a bit trickier, im assuing you are using honey, in which case it can take at least 6 months to be ready. I racked some honey mead today and tasted a sample at the four month mark and its a lot better than the two months mark. im orobably going to let it age and entire year before botteling. fear not, i have some bottles of mead i bottle last year to drink this year :)
Hint: If you punch a few holes in the pumpkin, then bake it the skin is easy to remove, and the flesh is tender enough to scoop out with a spoon. Turn it in to puree with a food processor, or mash it with a potato masher. You can also cut it in half using a large knife and a rubber mallet, then bake the halves on a baking sheet. I butchered 8 pumpkins a few years ago, for pumpkin bread. I still have some of the pulp frozen, and will attempt pumpkin wine. Enjoyed your video.
im the same way, i enjoy making wine more than drinking, i have 8 to 9 five gallons batches runiing at a time. for each five gallons i get about 24 bottles, for each 24 i end up drinking two and gifting the rest,
a quicker method to filtering is to use muslin bag put the pumpkin in the muslin and then into boiler and another for the raisin. Racking isnt exactly three weeks, it depends on methids and goals, some rack in week kne other in twoo weeks and some dont rack. I personally rack in week two and then leave alone for two months, that works for me, to each their own :) nice vid, im making some pumokin wine for hallow ween
How about using an apple grinder instead of a cheese grater? Since you already make cider I'm sure you can use it for al sorts of things around the farm :)
couldnt the raisons be a yeast nutrient? the dog kisses are cute. Pluss dont we have to wash our hands. wouldnt salt kill the outside yeast? i was wondering because i hear some wine makers say they buy benzel sulfate i thought benzel sulfate was a fancy word for salt.
kili ... is that a Sage bow? looks just like mine ;) i was thinking id try to use a giant pumpkin as a primary fermenter. id like to make banana pumpkin wine with sugar pumpkins. i avoid the introduction of air int o the wine, it effects the flavor (vinegar). less air in the bottles the better. i wish i could taste ur wine ;)

In NZ we are allowed to distill our wines etc as much as we like with there being no laws against it. Down side is stuff costs lots here for some reason. Searched for pumpkin mash to see if it would be a good for mashing to make pumpkin moonshine. I guess so. I am wondering what the SG of the must would be if no sugar used used. Straining my corn, barley and sugar mash is a pain in the arse. I am thinking a centrifugal juice extractor might make it easier. Nice racking there. Cleared up good. Cheers.
you seem to be like me. it seems like you dont like much alcohol , so you like to add just a little yeast with the sugar. my husband was joking about putting in 5 cups of sugar with two packs of yeast with apple wine in a 3 gallon bucket of wine and waiting two weeks before adding the yeast i was like no that is too much he said it would be only 50 precent alcohol.
at first i thought maybe you was going to make an apple wine, and by like a natural wax made of food and store the apple wine in the pumkin as a container after washing the pumkin then real seal it with the wax let the wine sit for a month.
several ways to clear wine, but in this video when she steained it with the cheese cloth, that acted as a filter which aided in clearing, then she let it sit for a months which allows more sediment to drop to the bottom. finally she racked (transferred to a new container leavinf behind sediment) thats what lead to clearing in her wine. filter snd racking.
