    in my country i don't have access to food dehydrator, how can i dry tempeh without spoil it before the dry time completes? thanks for the video

      @@mig6789 bad advice. With more than 35 C° the mold will die and you will have deactivated your starter. Better on a wooden desk on the heater.

    Thank you for the instruction video I notice other videos use some vinegar to discourage other bacteria from growing as it makes the mixture somewhat acidic.

      Yes, you can add vinegar but I didn’t use it .

    Very helpful! Thank you for this video. I'm just making my own tempeh for the first time using a tempeh starter I bought a while back but I was worried about what to do when I run out of it. I live in Chile and there aren't any places that sell starter here, so it's perfect that I can use this method to create my own. :)

      Tanisha M if you are success making this tempe starter , you can always continue to make the starter just save the tempe you make that is for the basic tempe starter , try to fallow my video I hope you can make successful

    Thank you! Your method is so much easier than anything else I've seen. I just tried it and it works very well. 2 questions: What temperature are you dehydrating the tempeh at? I have read that it should not go higher than 104 degrees F or 40 degrees C. Also, can I use different types of rice flour? Brown, Black or red rice for instance or does it need to be white? Thank you!

      You’re welcome, my dehydration machine doesn’t have the set time . The more higher temp you set up, the quickly to dried out . If you know sure , try to set up the temp in the middle . I think it will work with any rice flour . Good luck for trying .

      Karotten Kind good luck sister, I hope you succeed making this starter . Yes you can premix with riceflour & starter but the measurement has to be right , so fallow this video for the correct amount of the riceflour and starter mixture ok .

    I make tampeh in glass containers instead of plastic and I cover with natural waxed paper and punch holes in those. It becomes a bit black. How come this is so white? Is it maybe because there is rice flour inside, and not vinegar?

      Sigridovski... i think, the reason why it is black because you put the tempe in the container , you need to be press all the air out so the fungus doesnt grow too long that make its black .

      @@koravinthakral6928 There are no banana leafs in Denmark, and it would be slow I think. I stopped using a lamp to heat up the cupboard and it did not turn black at all, and it was so easy to do. It seems it don't need to be in 23 degrees, can stay in a bit less. I keep it in a wooden cupboard. It is possible the tempeh makes it warmer in the cupboard all by itself and even now in the winter it worked well. My soya beans are old though and I have to put 1/4 tsp of bicarbonate of soda in the soaking water and it turns out a bit less tasty. I will have to buy less beans so they don't get old.

    Great video thank you for sharing. How much beans do you use in a batch? The bags of beans I get here are different sizes some 300g some 400g some 500g and the last is 1kg

      rsa420 thank you , the soybean is around 300 gm - 400 g ., use my measurement on the this video for the “ Tempe starter “ if you use soyebean around 300-400 gm, I think it’s will be ok . Good luck 👍

I am new to temphe can you batter it and fry it like you can tofu or does it need a bit of cooking before? Thank you again for the help and advice

      rsa420 you can cooked tempe like a tempura ( cut tempe in super thinly , then mix w/ flour & rice flour combine together ) , ..or you can take a look at my video how to make for more detail. Thank you if this is video is very useful. Good luck for trying .

      Yes you can use fresh tempeh I'm not sure about store bought though I would use 300g of cooked rice and dry

    That is a great idea to make own tempeh starter. Many thanks. 2 questions : (1) what is the purpose of the rice flour - to give the culture an early nutrition boost ? (2) why you don't use vinegar (which almost all other tutorials do and I always add vinegar) ?

      I think , if you use without rice flour the starter is too strong for the starter ... you cannot put too
      Much on the soybean when you make tempe , it will damaged the process, so the rice flour helps to expend the tempe starter, need a certain quantity on the process making tempe . And the fungus can stick on the rice flour for long time.

      cinapanina I don’t think you can used rice cooker to dry the tempe starter , may be oven you can but still need to dehydrated over the sun light just a couple hours...May be it’s work but I am not sure sister, this is only my opinion .

      I think the rice flour is best to absorb the extra liquid , rather than tapioca flour, but If you cannt find a rice flour , may be add little bit tapioca may be will work too .

    Hello there, thnx for the video. I used dry red beans. Is it normal to have a very strong not so nice smell while incubating?
    The first batch failed and the smell was horrendous...not even my chickens ate it. On my second batch, 10hrs now, and I am beginning to smell a strong smell again. Is it normal for red beans to have a distinct smell?
    I have done chickpeas tempeh and no problem but trying red beans are proving a challenge. Any suggestions? Thnx ~Michelle

      Ohh no , I don’t think you want to have to strong sense for your Tempe Michelle , try to dries your bean after you boil then and you only need to cook little hard for red bean because red bean/ white bean is not the same texture as the soy , soy is more hard so easier to work when you do fermentation. So cook
      Your bean just before her to soft. Good luck

      No Nickname I used around 300 gm soy bean , the small bag when I get in store , but little more than 300 almost 400 it doesn’t matter . It’s still will work. Good luck , I hope you success making this tempeh.

      Yes you need to store in the room temperature for this starter , and definitly you can repeat this process for decades .

      Saya selalu buwat tampa Cuka, tapi kalo mau pakai cuka juga boleh, mungkin tempeh lebih lama jadi krn ada acid Dan juga vinegar bisa membuhun bacteri , .Maaf kalo saya kasih salah info ya ,

    Hello, I'm using a food dehydrator. I have seen to use it 225 F and another video said not to go over 110F How hot should this be set to?

      Matthew Barlow my food dehydrator doesn’t have a control mode , only on / off set. I think if you set a 225 F it just a speed the process quickly to dried out . I think the fungus is still alive . Good luck .

    i saw a web site that said you had to wait until your tempeh grows spore meaning that it turns gray and black is that true? it looks like you used fresh tempeh terima kasih banyak :-)

      Yes you can do both , because I uses from fresh tempe so don’t need until the spore turn gray sister Lisa , just dyhrate the tempe n grind it super fine . That’s already starter because the spore on it already . The reason why the spore turn
      Gray because you came tempe starter from scratch & you don’t cover the bean tightly or press until lots of air in between . The more space you give the more spore grow high and spore will turn turn gray . I hope I answer your question sister

      Nana Asare hello , I am not sure because I never do it , but try do the half process dehydrate on the oven, and the half process hydrate under the sun if you want a better result for your starter. I hope I am answer your question . Good luck nana

      Gina Lee just place the Tempe at plastic ziplock w/ out steam it , than you can used it for next time . It can last for 2 week in the freezer .good luck for trying my recipe .

      Gina Lee I never freeze it more than 3 months , but you can try for small quantity Gina , I am sure it’s good but not best taste the more you save it in the freezer

      Irene Lau , yes I used just little bit, try to fallow the instructions for exact quantity of the rice flour irene . I hope it works for you . Good luck

    Great video. Thank you so much for sharing. I tried making tempeh starter a few years ago but was unsuccessful. I thought maybe my utensils were dirty.
    Is that 300 to 400 gr cooked or raw beans? Thanks again

      Lili Kays sorry for reply your msg a bit late, I used soy bean around 300 gm but little bit more weight it’s going to work also .
      Try to used a clean utensil so the fungus can grow . I hope this video is helping you . Thank you .

    hi Ziah. i have tried 2 types of tempe starter making from you tube. both failed. now i am going to try your method. hope it works. i am relaying on sun to dry the tempeh as i live in Dallas, Texas. What state do you live?

      I am living in NY sister Ami. I hope w/ my method making this tempeh starter /tempeh will suceed . Dont forget to fallow the techniques and step carefully so that you can give a good result taste on your tempeh.

Your recipe said "every bag of soybean" you need 2 tsp of tempeh starter... what is the weight approximately a bag of soybean? it seems will make 3 bags of tempeh. Would it be about 1 cup? thank you sister Ziah

    Why do you need rice flour? Why can't you just store the powdered dried tempeh?

      Alexandra Abraham I live in Ny so I never see the dried powder tempe, if you have in your location even better just grind super fine and add rice flour other wise too strong just powder dried tempeh .

    Not necessary to handle everything three or four times, or turn it over in one's hand three or four times. Best to get on with the process.
