- Baking time is 30-35mins at 180C
(always do a toothpick test for doneness)
Ingredients
1 1/4 rice flour
1/2c sugar
2tsp baking powder
2 eggs
2tbsp margarine or butter
1c coconut milk
1/4c milk (any type)
grated cheese (optional)
chooped salted egg for filling
toppings:
grated cheese
sliced salted egg for topping
melted margarine
shredded coconut

my super fav.. mukang ganyan un recipe ng mommy ko noon na di ko na malasahan sa mga nabibili ko and "margarine" nga gamit nya nun.. excited to try super miss ko luto ng mommy kasi noon na alala ko niluluto pa lang nya meron ng may ari kaya di ka na pwde bumili pag walk in..thanks kuya boyet this will remind of one of the best of my mother .. in heaven long time ago❤

Last time I had bibingka was CHRISTMAS ‘82 it didn’t have any salted egg or cheese, just butter and desiccated coconut 😏

I used to make bibingka tuwing pasko pero usually yun instant bibingka mix lang kasi tinatamad ako hehe😅 Pero must try ito😃 Simple ingredients and procedure tska sakto lang yun dami. Thanks for sharing your recipe Kuya Boyet😃 Will definitely try this soon.

I tried this recipe and it's perfect! Delicious, soft and fluffy.. i broiled for 1 minute after the addition of toppings, thank you kuya Boyet (I might be a lot older, but yes kuya, lol).
Does it taste like the typical bibingka during Simbang gabi?
kuya Boyet matanong ko nga pala yung coconut milk mo ba ay coconut cream or if not anong % fat nya.. i think i used the 50% when i made this recipe..

For me a bibingka is rice flour, you cannot call a bibingka if it is made of all purpose. instead of cheese I used a young coconut for authentic taste.
This is very true! I'm looking for an authentic/ classic recipe and I've yet to find it. What is all the cheese about?? I left the country in 1980 came back for a visit 10 years later and the puto has cheese , the ensemada has cheese my favorite ube cake has cheese they even put cheese in sorbetes and ice cream! Everything has an acidic taste, very bad for heartburn. Now there's ube cheese pandesal 😂 smh

Hindi ba umalat ang Bibingka, parang so bra ang cheese at salted eggs. Siguro mas mabuti kung sa top na lang ang cheese at salted eggs?
