I get why he uses the four minor chord. And the B-flat related chords. And even the Valt chord. But what “rule” lets the player mess with the minor 3 the way he does? Is it because it is easier to manipulate the minor chords within a key signature, eg. Em to Edim? How do I think of this technique going forward with any other song?. Thanks.

Is that all he is doing? The KFC has no sharps or flats. So is he just making a seventh cord out of each interval?
