Hello, thanks for sharing how you use violet. Letting the leaves set a day before infusion made sense. As for the ice cream I thought the end result of violets throughout was pretty. I would have made a violet ripple using a very thick violet syrup. After making vanilla ice cream and drizzle on top or slowly stirring it through soft ice cream( maybe with a skewer) For loose tea I use a glass tea pot that looks like a cup sold by Golden Moon Tea. It has a strainer at the top. After steeping I just pour out the tea. No bag, no metal, easier than a tea ball.
A bit off subject, just thinking if you are at that location for the long haul that big wall behind looks like the perfect location for espaliered fruit trees.

I use raw honey and dont want to heat the honey since it ruins the structure. Kills the good stuff i believe.

I’ve thought that, too! I do have a blackberry bush planted right in the centre though and it’s been spreading out, but I completely agree.
Does the oil keep the violet fragrance?
No, not really. Violets have such a sweet and subtle fragrance that it gets lost in the oil.
