Smoked Brisket on the Marshal Centerbox!

  • I wanted to test out how the new Marshal Centerbox smoker held up against a brisket cook. Since briskets have a longer cook time, this was the perfect test to see how long the smoker would last on a full basket of charcoal. This was also a good opportunity for me to experiment with different ways to cook and hold a brisket. Would thing I would have done differently is let the brisket come back down to temp a little bit before placing it into the Meat Swadl for the 2 hour rest. I think this is what caused my brisket to dry out a bit more on the lean side. Either way, it still came out great and the family smashed on this!

    I just found this video. Great cook man. I've been browsing for a new smoker that doesnt break the bank and would hold a turkey and ham for the holidays. I was considering an offset but I fell in love with vertical smokers a long time ago and this one has peaked my interest. I gave mine away as a wedding gift, yeah I'm not that smart dont hold it against me. I've noticed a trend with this smoker doing good or bad. The ones who complain about the smoker dont use the top grates, they take them out and use the lower grate. The ones who get a good cook on it use the shelves or top grates. Thank you for sharing this video. I know its over a year old but it helped me decide on what to get next.

    Glad I saw this! Smoking a brisket tomorrow on my Marshal. I like how you moved it up a rack, because grate level can get hot on the Marshal. Good call!

    Man when he was given the full break down at the end felt like I was listening to a preacher.. the smoke , the drippings from the meat make that aroma …I’m like “ yes Lord” lol can’t wait to get mine looks like it smokes like a champ! And thank you for the seasoning video for this smoker to pretty easy seasoning for this smoker

    I have a new Oklahoma Joe Marshal and I love everything about it except for one pretty big issue… the grates keep falling into the coals! They fit fine when it’s cold, but when it gets hot the grill expands and the angle iron doesn’t have enough surface area for the grates to sit on. Any suggestions?

    At the end did you say “I didn’t have to refuel” for the whole cook?
    or you did? If you did, how long will it run at that 250ish mark on a full firebox?

      Thanks for watching man! I did not have to refuel. I used cowboy brand charcoal, their stuff always lasts me a bit longer than regular charcoal. I feel like regular charcoal would give you 5-6 hours at 250. While good charcoal will give you 7-8 💯

    I noticed you used the top rack. Should I do that as opposed to the bottom cast iron racks? I’m going to try my first brisket on mine after feeling more confident on temp control.

    just curious hows temp control compared to the bronco? I know the bronco is pretty much set and forget, but i love all the space of the marshal.

      This gets up to temp a lot quicker than the Bronco does. Only had to adjust my dampers a few times, but nothing crazy. The bronco definitely runs longer than this, but has less cooking space/options.

    Love your videos. Ive been looking at this smoker and debating buying it. I have a highland and love it. Ive read some reviews and the only thing that has me a little deterred is people saying it leaks smoke like a sieve. What has been your experience with this?

      Thanks for checking my channel out! Mine leaked on the first few cooks. But just like my other smokers, it sealed up on its own over time. I’m old school so I don’t do too much of the mods with latches and all that. Just time and use for me!

    I’m very interested in this smoker. I grill about 80% of the time, but want something that can smoke at a high level when needed. Would you recommend this based off your experience with it? Thanks!

    Yoooo! Man can you do a video on controlling the temp? I have the exact same smoker and have trouble controlling the temp when smoking.

      Mine was running too hot. I no longer keep that little vent below the smokebox all the way open. It really helps me maintain my temps better.

    How far open did you open up the top vents? Or did you close one fully and left the other a quarter open?

      Started all the way open then adjusted them throughout the cook here and there based on the temp swings.

    Interesting... would you say that you're getting both offset type flavors as well as direct heat/direct charcoal flavors with the fat hitting the coals?
    Does it allow the fat to get down to the coals the way it's setup?
    Also, I'm guessing that was fat cap down?
    I've been thinking about doing a direct heat brisket at some point. This cooker is interesting.

      Great questions! The flavor profiles I get are direct heat charcoal for sure. Light charring on the food. The fat definitely finds its way to the coals, which smells and tastes amazing! I definitely suggest going fat side down. Cheers! ✌🏿

      I always let my stuff seal itself lol. The more I cook on it, the less it leaks smoke!

    You really should use a stump to hold the wood you are splitting down with your axe. Otherwise you are going to dull your axe edge really quick when it hits stone.

      It’s actually pretty good man. I’ve been beating it down. As long as you keep it clean to avoid grease fires, it’s gonna run a long time for me!

      @@JonathanBBQ I was a bit worried about quality as Ive heard/seen others complain that the firebox and chimney start to peel after a few uses. Also some claim the firebox gets too hot.
