Ignoring the fact that T&B is 5 very different scenarios, the official PDFs found on Catan's website is outdated. They reference maps from Seafarer's 3rd Edition (square frame), so the instructions there don't work for today (5th edition)

I don't like, that I can find explanation only of wooden Catan, while I have plastic one. The Cities & Knights expansion has the same things in plastic version, just everything looks differently, if I compare it to the wooden version, it's hard for me to understand how everything works.

Yes, I only have the wooden but have seen the plastic version on the base game. I haven't seen it for Cities & Knights.
