I learned to grind primarily Blade Down by Chad Osborne. Ive only recently begun grinding blade up and appreciating how much more I can see what Im doing when grinding to my blade edge. When I flip back blade down it makes it real easy to clean everything up and match both sides.
That won't exactly make daggers easy, but it certainly can help. Bit of random trivia, my first attempt at making a knife was a dagger (not a quillon dagger, but it was double edged), the hardest part was that I was trying to create convex bevels using a bench grinder. The result was unsurprisingly terrible, but I wish that I still had it to compare to my more recent work.

Is there a specific reason for using a 1"/25mm belt and not a 2"/50mm belt? What are the pros and cons of 1" VS 2" belts?
Well, that's easy ... I only have the 40mm diameter wheel in 25mm wide ... ;)

I've always grinded edge down, that's how I taught myself years ago, edge up, can't see what I'm doing, lol...
