I rode from Aachen (Germany) to Girona (1500km) last September in 10 days. Did 100-220km a day. You don't need the best/most expensive bike and gear. Just start!
I would suggest Bergen to Venice. You start with the fjords and cycle over the Rallervegen which is closed to cars then you get to Oslo. From their you can go down through Sweden, Denmark, Germany, Austria and take the Brenner pass across the alps to Italy. It’s then a cycle path all the way to Verona pretty much followed by some gravel paths and road cycling to Venice 😊
Good and informative video - That was an expensive setup, but you can definitely use a cheaper bike. His bike didn't have any mounts under the downtube. There are gravel bikes that do so you can put a third bottle there or a small carry bag. How far do you intend to travel, 500km, 750 or 1,000? Some suggestions; 1) Girona -
I rode from Ghent to Copenhagen in 2020, around DK last summer, hope to continue further in Sweden in july/august. So my topsuggestion would be Denmark: top road & transport infrastructure (especially with bikes!), variety of islands and great cities, easy camping/free shelters, not too hot, ... Looking forward to your adventures!
How about Girona over to Lucca in Tuscany - a beautiful part of the world to cycle and sight see. Although I thought you were now in New Zealand, so not sure if this will be for the future.
FYI, another form of "bonking", e.g. muscle fatigue & cramping, is caused by depleted electrolytes. See the book "The Salt Fix" by Dr. James DiNicolantonio.
Excellent video, love your channel and good to see Lawrence there. As another person said his set up is top line and expensive. If you have a bike you can go bikepacking, no need to spend 10k if you don't have it. I consider hotel to hotel on pavement bike touring. Having your complete camping kit, traveling rougher roads and sleeping out is "bikepacking". But semantics aside you two nailed the essence of it "getting out, traveling from place to place, being self sufficient on your bike". Can't wait to see your adventure, I enjoyed the one you did to see your best friend in Australia

For shorter trip, the Torino-Nice rally sounds amazing, for a longer one the Atlantic route in Norway is a dream, from Stavanger (or even from Oslo) to Tromso, but that is more for summer months.
You should come to Lozère, in France, if you can and want ! like the gorges du Tarn and gorges de la Jonte are really pretty ! (and i'm not saying that because I live there 😁)
traveling by bike your 'in' the landscape. traveling by car, bus or train then your 'on' the landscape.
