Nah, she just can't fry chicken. I've used canola, peanut, grapseed, and olive oil. My chicken never looks like that. Also, if you're going to use another breading besides flour, grind it fine, so it's not so tough and dry looking

As someone from Scotland I was kinda surprised that cornbread was sweet. I always thought it was savoury when I heard about it before.
It depends where you are from, I am from Louisiana and there are sweet muffin-like cornbreads, there are savory ones like you eat with stew, then there is hot water cornbread-yes please!
Real cornbread isn’t sweet, but I think it’s a opinion/dispute.
