Yum can I use veal for this? Trying to figure out if I should make nihari or korma with it

Yes absolutely, veal is my go-to choice of meat for Nihari. I personally love mutton for korma but veal works just fine for that too :)

Sister try shaan nihari masala, i used to use national before but trust me shan is so much better then this. JazakAllah
