Rolling is for Cooper’s ale in Australia. A Hefeweizen should be poured until 1 cm is left in the bottle, then swirl the bottle and tip out the remaining foam on top of the beer. Also, correct glassware is imperative. Chalice for Trappist, Tulip for Duvel and the correct pilsener glass for pilsener. Manufacturers also etch nucleation points to control carbonation in the glass to the brewers specification. The wrong glass can cause flatness, overfoaming or too large/small head, causing excessive sweetness/bitterness. Nitro beers were designed to imitate the mouthfeel of a British cask pour, but suffer from dulled bitterness due to the Nitrogen.
I do age some of my Homebrew (corked) bottles laying on the side because the yeast sediment seems to have more interaction (strewn down the length of bottle) with aging wort. I’ve also found that “cork taint” adds to the Belgian/Flemish style I’m trying to achieve.
Have you tried adding oats to your wort? I added oats for the first time a few years ago and never looked back. About 1kg in a muslin bag, add it the same time as the hops. Do you heat your wort? My mate does it cold and it's just not the same.

Conflicting ways in which to pour Guinness. The master brewer says the 45 degree angle pour, some others say to pour fast. I'm not sure if Guinness draught is a nitro, or their original, Extra Stout. Although I know they have the new canned Nitro infused stuff (It's Ok, but not full bodied as I like my Guinness).

Use a beer foamer. The beer tastes fantastic. I use the Menu Beer Foamer by Norm Architects.

If you pour beer properly , you shouldn't get bloated
robertk2007 exactly, and to not get bloated you need to get rid of a bunch of co2 which requires a harsh pour

When you put the Hefeweizen in that glass you could hear the south Germans cry. You need a special long Hefeweizen glass for it.
