A UV-resistant urethane will keep the white part from turning grey with exposure to the sun. The attraction of diamond willow is that the living part has white wood under the bark, and the dead parts (from the fungus or whatever) around the old branches will be reddish in color, so you probably want to keep that contrast. Tung oil or something might feel more comfortable to the hand, I'm still experimenting myself.
