    Famous Amos Inspired Chocolate Chips Cookies
    Ingredients:
    250g unsalted butter
    250g / 1 1/4 cups brown sugar
    2 tsp coffee powder
    2 tsp water
    325g / 2 1/2 cups all purpose flour
    170g / 1 cup milk chocolate chips
    170g / 1 cup dark chocolate chips
    1 tsp vanilla essence
    1 tsp baking powder
    1 tsp baking soda
    6 tbsp vegetable oil
    1 egg
    Instructions:
    1. Combine softened butter, brown sugar, vanilla essence, egg, and mix well. (Not necessarily to use a mixer, you can use a spatula to mix)
    2. Dissolve coffee powder in water.
    3. Sift in all purpose flour, add baking powder, baking soda, vegetable oil and coffee mixture, and mix well.
    4. Pour in the chocolate chips and mix well. (I don't have chocolate chips so i just cut chocolate bar into chunks)
    5. Refrigerate the cookie dough for 20 minutes (MUST - to get the crunchy texture)
    6. Preheat oven to 150°C.
    7. Scoop small amount of cookie dough and put it on a lined baking tray and distance them. (Don't need to roll it into a perfect round ball and make sure you make it really small because it will spread and become bigger after baking)
    8. Bake it for 20 minutes and enjoy the smell.
    9. Wait for the cookies to cool down for them to be crunchy.

    NOTES
    1. I don't recommend using Cadbury milk chocolate chips, they are too sweet if you are not a sweet tooth. You can either substitute with all dark chocolate chips or use Whittaker's milk chocolate. (I’m using Whittaker’s 72% cocoa dark Ghana & 33% cocoa creamy milk)
    2. The butter and brown sugar is hard to mix at the beginning, it will be easier to mix them with a spoon.
    3. Make sure the dough is cold before putting them into the oven.
    4. Add 1/2 cup of corn flour (60g) if you enjoy more airy and fluffier cookies.
