So he blunts the knife on a brick, goes straight to the 6000 polishing stone, and wonders why he's not getting a good cutting edge?

@@Hades035he's testing the effects of over soaking and the stones polishing ability. Metal doesn't have to be sharp to be polished. Yea he checked to see if there was a burr, which is why everyone is getting their panties in a bunch. He was prob seeing if the stone was doing anything, since it wasn't polishing, and maybe thought soaking made it coarser. Whatever. Either way, whether he was trying to sharpen or not, it doesn't change the fact that the stone wouldn't polish the knife how it does when not over soaked, which is what the whole video is about.

Old video, but I'll add this comment. I have permasoaked a King 6,000 stone for years. I keep it in a Rubbermaid leftover container in a kitchen drawer, and use it with a stropping (edge trailing) stroke as the final step in many sharpening sessions. Works great, no complaints, would have never known I was suffering. Just my experience, thanks for the hard work!

    • @Mary-Ann_B_Mabaet
      @Mary-Ann_B_Mabaet 3 ปีที่แล้ว +1

      Haha, my thoughts exactly.
I was even thinking like a 500- stone if it's *that* dull, transfer to a 1000 grit after 2 passes each side at the least, and repeat then the 6000 or higher since 6000+ are for mainly polishing, right? And, from what I've heard, 6000+ are preferred by sushi chefs but, again, after using a lower grade stone. Thinking about it since it's been lock down to practice some cooking techniques.

Hes not trying to sharpen the knife. Metal doesn't have to be sharp to be polished. He's testing the effects of over soaking and the stones polishing ability. after spending a lot of time on the stone he was feeling for a burr to see if maybe the over soaking made it coarser or if it was removing metal or anything. Either way it doesn't change the fact this stone wouldn't polish a bevel that was already polished to begin with. The brick only damaged the very apex, not the previously polished bevel.

according to many knife sharpeners, you don't soak polishing stone(3000 grit and up). I have the Shun 1000/6000 and the Mizuyama wide 1000/6000, I only let the 1000 side soak(I fill water up to about half the 1000 side) and I can permasoak it like that with no problem.

I soaked 6000 grit for too long cracked up. Quite a soft stone I just wet it mainly now. The king 4000 grit is a harder wearing stone but loads up. To be honest I think it is better than 6000grit. I have a 200 grit king and it is very hard and slow cutting. 1000grit cuts well but is a muddy stone. It is just annoying that within a line of stones some shine more than others and some like 200grit really disappoint.

One important detail. Just in case.
Do not use only one naniwa nagura on 5+k stones.
It not only cleans but also forms a surface, she is made rude, for stones up to 4-5к grit it does not affect the result. But from about 6+k smoothness of the surface (Not the flatness of the surface of the whole stone, namely its smoothness) it already affects and seriously. The problem can be solved by rubbing the stone with something fine-grained. Just try rubbing your finger on the surface 8к stone after naniwa nagura and after glass or something smooth or fine-grained. Suehiro recommends his nagura with 3к or 5k grit for 6+k stones. It's not accidental, it's important.
In this video, I think, after naniwa nagura a rough surface was formed, at sharpening the knife was dull about these roughnesses, this may well be.
You said that the knife is grip to a stone. It may well be the wrong surface of the stone.
Either something is wrong with the angle of sharpening. Make a micro-bevel.

Metal doesn't have to be sharp to be polished. And by starting with the 6k right off the bat he could see what the stone is actually capable of, if it's removing material or polishing, feedback, etc. He's testing the effects of over soaking and how it changes the stone. Before you bring up him checking for a burr, that's bc when it wasn't polishing he kept going and then probably was feeling for a burr to see if it was cutting metal. He's simply testing the the stone, it's ability and effects of over soaking. I don't understand why everyone is getting all crazy about sharpening. It doenst change the fact it didn't polish the knife, which was probably already polished before the brick. And the brick only alters the very apex not the previously polished bevel, that this stone wouldn't polish.

I know it's an old post, and I hope you're not still waiting...
BUT... I do have some experience with this sort of thing...
You CAN heat stones to get rid of unwanted moisture... BUT you absolutely MUST be careful with "synthetic stones"... Natural stones are usually a little more durable, but synthetic stones have adhesive "filler" mixed with an "aggregate" (cutting) material... not so different from a "bondo kit"... ONLY the sharpening stone would use something like diamond dust, a ceramic "chip" material, or very fine debris from crushed gravel instead of the fiber-glass strands... AND there's a "proprietary" recipe for the specific epoxy "filler" and the ratio of goop to gravel (essentially) for each stone and company...
Keeping the heat around 100F (30-ish C, I think) is reasonably safe for most of them, but you surely don't want to stray "too hot" because it will invariably weaken the glue/filler that holds the thing together... and you can break up your stone back into the grit...
Just sitting it out in really LOW humidity will also accomplish de-moisturizing, BUT that can take days... as in DAYS.
My personal favorite method for de-moisturizing most "delicate" things involves a large-ish cardboard box, a light wood frame with window-screen, and about a 100W lamp-bulb...
The box (for intent here) only really needs to be "reasonably enclosed" so it slows air passage, but more directs it upward from the lamp... The lamp (obviously) sits at the bottom of this "ventilation riser" with whatever you're "drying" on the lightweight frame and window-screen.
The frame and window screen is just what it sounds like, and you don't have to waste a lot of time or effort... Neatness does NOT account for efficacy, only how much you risk "dinging your fingers up" with the screen... I usually just fit four pieces of light wood (1x1) together so I can span the box... AND staple the window screen to the wood to support the weight of what I'm drying... If you're dutifully careful not to hopelessly mutilate the box, you can slow air passage enough to heat and dry the air before it washes over (or upward) the object for a more effective drying out process... This method is also reasonably effective as a dehydrator for things like spices and herbs or tea... I've even done jerky in it, but that also required a "pre-soak in marinade. (lolz)
Here's where I tell you that this cardboard contraption isn't (by design or merits) my sole engineering marvel. It will work as effective and fast as YOU care to make it, so with the knowledge that "Hot air rises by induction" you can take it as far as you want... I might advise you keep around a thermometer that you're confident with, so you can keep a reasonable eye on the "operating temperature" as you experiment... AND of course, have fun. ;o)

I have the 800/4000 grit version of the King KDS and I never could like it. Even without over-soaking it the 800 side doesn't cut well. The 4000 side cuts pretty well but for some reason it doesn't give me a sharp edge. Maybe it's just me but i do better with Arkansas stones.

Man first of all: you dont have any clue.
    1. you do not soak fine grid stones ;) you just wet them. Thats why you dont buy combined stones with more than 3000 grid.
    2. In this video youve said you dont feel burr. You dont even know that 6000 grid stone produces microscopic burr and you dont feel it unless you try with your finger nail. :)
    3. You should be much more gentle with pressure at 6000 wet stone. Its just for polishing. Not sharpening.
And for the last and forth thing: you just dont rub your knife back and forth!!!
I would be pleased if you would give an opinion on my comment :)
I just need to know whats in your head :D

Dude get a clue. This is showing what happens IF you permasoak your King stones, a discussion reaching far into the sharpening community. And yes, the push pull method works beautifully and saves time, I have fixed over 40 knives with excellent results, using the push pull method. And Dave from Knifemerchant vouches for the push and pull, and they sharpen proffesionally.
