    Some tips:
    1. Use granulated sugar for a more stable meringue
    2. If your almond flour is too lumpy , you can use a food processor to make it even finer
    3.When youre piping, pipe at a 90° angle for better control over the batter
    4.Use a template, especially for beginners
    5. After piping, you should tap the macarons 3 to 4 times , so they can spread evenly and release the air bubbles
    6.Use a toothpick to pop the air bubbles trapped on the surface
    (7. If you want to color your macarons, use powder or gel food coloring in order to avoid extra moisture in the batter from a liquid food coloring)

    I REALLY enjoy your videos (from Raleigh NC)! I am selfishly going to say, I wish there were more videos! I think I have watched all your videos, except this one. I have never been to France so I love watching you. You are so friendly and energetic! You are engaging and very interesting. Thank you for taking the time to make these. I have 2 French lady friends (met by accident on a French penpal site years ago) 1 in Tarascon and 1 in near Toulouse so I love to learn about France. Thank you!

    I love your show. Used to work for a French company and been there many many times. But, I've never been inside the kitchen of a boulangerie. Please show more of bakery. That's the best of French ( in my opinion).

    I loved this Diane! And I didn't know they use almond flour to make them - that's great as almond flour is now my go-to flour. You have inspired me to (maybe :-)) try my hand at making these. Being in lockdown mode has me baking more already, so why not step my game up a little!! Don't laugh at this - the first time I was planning to visit France, about 10 years ago, some friends said I had to try French Macarons. I thought they meant the chocolate covered coconut macaroon, but I quickly learned otherwise. Haha. My favorite flavor is chocolate, but I don't think I've ever tasted one that I didn't like. Thanks for creating and posting this. Keep them coming - love your videos!!

    Thank you for the video, and the macarons looked wonderful.
    I was taught a different technique - whipping the egg whites with sugar and sugar syrup, and not just with powdered sugar.
    And the filling was so simple!
    I'm going to incorporate a few new techniques when I bake my next batch!

    Video is terrific! I always thought macarons were so difficult to make but you proved to us they are not! I'm going to try it and by the way the pistache (pistachio) is my favorite. Thank you.

    Last time I was in Paris I bought some macarons to bring home to Canada. I opened up the box when I got home and saw the most beautiful rainbow array of crumbs I'd ever seen. Yes, I cried.

      They are very fragile cookies! I have always brought them home in my carry on bag or even just carried them in my hands with no issues.

    Le macaron est simple à la base.
    Il est fabriqué de différentes manières suivant la région.
    Il n'a pas deux coques et une farce.
    Celui que vous montrez est le macaron parisien. Nettement plus précieux que les autres.
    Mon préféré est celui à la graine de sésame grillée ou au caramel beurre salé

    I just tried to make macarons for the first time using a recipe which I found online. It turned out pretty good, but not so perfect. This video is very helpful for me as I want to try again. I lover your video about boulangerie, too!

    I'm glad you made this video, its important to see what ingredients go into food. I've never heard of macarons, but I don't think I could ever eat them. I am deathly allergic to egg whites, they make me rapidly swell up, while turning my skin red, giving me a rash and making it difficult to breathe! The more I learn about French cooking the more terrified it makes me, if I ever go to France, I would not know what to eat!

      Just say you're allergic to white eggs and the waitress will tell you what you can eat, and what you can't.
      Not so complicated.

    I understood that you had to bang the tray before baking to get the 'foot' to form, I didn't hear him mention that.

    My goal is to learn to.make macarons. I've attempted a few times and they've turned out ok but still learning. Did he use confectioners sugar for his meringue? Every recipe I see online calls for granulated or castor sugar for the meringue! Thanks!

    Is almond flour the same as ground almonds? Great video but it’s far too fast. Need to slow down.

      it's the same, finely ground.. You can control the speed of the video by clicking on the little cog icon. When I am listening to lecture I speed it up 1.5 times but when I'm trying to pay close attention I sometimes reduce to .75. Hope that helps :)

    Beat the butter into a pommade. What is that?

      A "pommade" is a cream that you put on your skin when you have pain.
      Butter "en pommade" is a creamy butter. Not melted in a pan. Just kneaded to make it soft enough to incorporate it into something else.

    Your videos are great, especially the ones about speaking with confidence... 😉 I can read and write really good in france, but speech is a bit of a problem. I studied franch and englesnin school. English is my second language, but I am much more confident while I speak English, it is much easier. As far as franch language goes, I have the same problems that you speak about in your videos, and your tips definitely help. I wish I had seen your video before my trip to france 😂 anyway great content, best wishes from Montenegro 😊

    honestly, your macarons do not have nice feet and the look very hollow and underfold. I also wonder that you use powdersugar for your meringue rather than sugar. Also the filling is very little compared to the macarons I have seen at Laduree or Pierre Herme and done myself since many years. I do hope the macarons taste better than they look like.
