I really don't wanna sound like a hater, but after cooking for 22 years and having experience in creating cookbooks, stage food for Hollywood studio films etc..the one thing food photographers really need to keep in the forefront of their mind.
Don't focus exclusively on composition and staging. All the unique forks etc are nice props, but the reality of food photography is that clients will always want two things.
1) Food that invites people to want to make it. This is the big issue with high end cookbooks. People with the book don't want to attempt the dishes because they have massively advanced recipes and are so beautifully captured it intimidates the viewer.
2) The viewer should want to eat the food.
If you find yourself in a position where someone says, "What a beautiful photograph of..." Then consider that a fail. It is not until the viewer says, "Shit, that looks delicious." Then your on the right path. You have nailed it when the viewer says, "I want to eat that." It is the biggest challenge when presenting work to large cooking publications. They don't simply want great images. They will only take images that makes people want to eat it. It is kinda the same in editorial modelling. Being beautiful isn't enough..you gotta make people want to be you.
I am in no way criticizing these peoples work, but the best example i can give is;
1) Heston Blumenthal food presentation and cookery lessons are technically elite..you marvel at his craftsmanship.
2) Gordon Ramsey food presentation and cookery lessons are short and sharp..his direct manner and charisma capture you.
3) Jamie Oliver food presentation and lessons are no where near as advanced..but his approachable style and enthusiasm makes people want to eat it. That is why his publications vastly out sell the other two combined x 10.
That is the huge element I would give advice to budding food photographers. Relax on getting a perfect composed imaged..focus massively on capturing an image that makes you want to eat it.

Went into the depths of youtube and watched some amateur creators to see the difference, then came back and watched this. The level of quality you put out is just astonishing.
