Hey everyone!
Today I'm going to show you how to make a no-bake lemon rainbow cheesecake for Pride!
To celebrate Pride month, I'm going to be sharing with you different Pride inspired food recipe's, and first up we have this no-bake cheesecake which has a digestive biscuit base, and the cheesecake mixture is flavoured with lemon zest and lemon juice.
Ingredients:
250g digestive biscuits
100g butter
600g cream cheese
300ml double cream
150g icing sugar
The zest of 1 lemon
The juice of 1.5 lemons
