Just ran some mead yesterday, a friends 5gal batch went sour on her, I threw in ALL my feints and got a goodly amount of delicious honey brandy. Can't wait to try it in a month or so after it's settled down.
Wow amazing experiment. I like mead, and this sounds so awesome. Funny story on your aged vodka. I just did that. Picked up a a 1L aging barrel, put some gin in it for a few weeks, then put vodka, with a few drops of vanilla extract to the barrel. After 4 weeks that turned out very good. Makes an amazing martini.
I have 5 gallons of Apple Cyzer Mead aging in an American Oak Bourbon barrel char #4 for 3 years. 5 gallons of apple juice, 10lbs of apples, 10lbs of honey. Gonna pop the top for Christmas.
A fun fact about yarrow is that it was used historically as a poultice to bandage wounds. In the modern day, it can help with cramps when made into tea. I make an herbal tea with one part each of lemon peel, ginger, and yarrow, and it is delicious and good for you.
I think the meads should be aged in some used wine barrels, especially apple wood, charred oak, maybe barrel age some in white oak but add chunks of peach wood or cherry wood and see where you can take the flavors.
You should watch City Steadying Brew and see how they made their version of Skyrim Mead. They make 1 gallon batches but everything can be scaled up. They will also show you how to mix the honey and water to get your Starting Specific Gravity.
vikings (or skyrim people) would use the cold weather to freeze distill mead, ie. freeze it then pull the ice layer (water) off the top, maybe you should try freeze distillation, with ice magic, or a freezer, whatever is easier.
