Authentic Turkish Special Kofte Recipe (Turkish Meatball)

  • Ingredients:
    500g minced lamb or mutton
    1 cup finely grated sweet potato, strained
    1/2 cup finely grated onion, strained
    2 eggs
    3 bread slices
    1/2 cup chopped parsley
    2 tbsp chopped mint
    1/2 tsp paprika
    Salt to taste (about 3/4 tsp)
    1/2 tsp cumin powder
    1/2 tsp sumac
    1/2 tsp black pepper
    Instructions:
    Start by straining the grated sweet potato and onion to remove excess water. You can use a sieve for this.
    Soak the bread crumb in 1 beaten egg.
    In a mixing bowl, combine all the ingredients for the köfte, including the strained sweet potato and onion, soaked bread slices, minced meat, chopped parsley, chopped mint, paprika, salt, cumin powder, sumac, and black pepper. Mix everything together well.
    If needed, you can add cornflour to the mixture for better binding.
    Grease your hands with oil and shape the köfte into oval flattened sizes. You can spray oil on foil or baking paper and place each köfte on it. Spray some oil on top of the köfte as well.
    Cooking Methods:
    Oven: Cook the köfte in a preheated oven at 210 degrees Celsius (410 degrees Fahrenheit) for 20-25 minutes.
    Frying: Alternatively, you can fry the köfte in oil until they are cooked through.
