I’ve seen that the clip you called a “key fob” is to keep the zipper pulls “locked” to avoid pick pockets.
Think the snap part could be used for a scarf or to hold a little sweater on the flight ✈️
Thanks for the great review! Got both to take on an upcoming trip to Greece. :) No clue what the snap is for (it's totally random), but the hook you refer to as a key holder is to clip through the zipper pulls so they can't be opened by pickpockets. It was one of the features that sold me on the bag beside the RFID.

Maybe the tabs can be used when the bag is under the seat on airplanes. Clip it around the leg of the seat to keep the bag from sliding around under there.

Great video I found watching you fold that up very informational because I have trouble getting mine folded up and that made sense on your instructions. When the bag is extended at the bottom, does it still meet personal item carry-on restrictions I didn’t know if when it’s extended, if it would still fit under the seat in front of you?
If it doesn’t you can always go overhead bin!

Tabs could be used to hold the sides together while folding. I tried it. Seems to work and folding the sides after you fold the handles and top is THE WAY TO GO! So much easier. Tried the tab snaps to hold it all together 👍🏻👍🏻👍🏻
