      I've never understood why people are so scared of carbs. People are fine with eating tonnes of meat, cheese and eggs but if somebody eats a potato or noodles they are like "WOAH that is so bad for you!" 😂

    I think it's the mistakes that give this channel its charm. Messing up words and recipes and then leaving that in the video shows a level of authenticity that other channels don't have

    I've been on and off vegetarian my whole life, and recently I've made the decision to be a 100% vegetarian, and I've been making a lot of your recipes! The only reason I'm not vegan is the occasional indulgence. Your recipes are helping me eat more plant based meals. Thanks!

    Love the budget meals! Most of my vegan meals resemble these since I'm always on a budget. But I'm curious to see a video for what you would make if you had to cook something fancier, maybe for a dinner party or special occasion.

    so awesome to see you didn't use a blender for the pasta sauce. I often watch affordable meal videos that all rely on a blender/food process, but a lot of a us broke folk can't afford to splurge on them

    Hey. I love your recipes and your channel. I’m a 16 year old vegetarian and I still live with my parents so I have to cook all of my meals on my own. I don’t really have a high budget for food but your recipes really help me. They’re pretty healthy too and that’s important for me because I’m trying to lose weight( My doctor told me I should, it’s not for being skinny) and I already lost 10 pounds. Sometimes I add non vegan but vegetarian ingredients but they still taste super good. I live in Germany btw.

    Amazing recipes, I fangirled a little bit when I saw you were preparing a paella, since I'm from Spain. Your version looks delicious, sometimes when I have lots of vegetables and I don't know what to do with them I just make a huge paella XDD A recommendation if you don't mind, is not to stir the paella in the last minutes of cooking, you will come up with something we call "socarrat", that is like crispy rice at the base of the paella.

      Mónica I also fangirled when i saw the paella, I was also thinking about how much better it would come out in the traditional cast iron pan and baked :-) what a good way to use up veggies!!! I've put everything from bok choy to eggplant in mine, really such a good meal!!

      I was about to write the same comment! In fact, my family is all about not stirring the rice altogether, and also maybe using a little bit less stock, so rice is more in the crunchy side! Love these videos!!

      your also supposed to cook to rice in the pan with the spices and veg before adding the liquid? If i remember correctly. And yeah then let it sit.

    Just made the vegetarian paella it was so delicious! As I didn't have a lot of the vegetables you mentioned, I added alternatives (carrots and peas) and it still turned out amazing. I love that you can use whatever vegetables you have lying around and as a student this is perfect for me!

I've recreated many of your recipies and I didn't share it in social media because the only "social media" that I have is youtube, but I recomend your videos to some friends that are vegetarian because when they taste your meals done by me they love them!     Thank you for sharing this budget friendly recipe. Budgeting better with my groceries has been heavy on my mind with all the rising prices. This kind of video is so helpful for me and I am sure many others right now. I try to budget best I can but I know I can always learn more.     I made the creamy mushroom pasta for my husband. He ate 3 bowls at the table and 4th later as a midnight snack! I had to make it for him again about a week later. I made it on a propane grill because we were at our cabin - it turned out beautifully.

    Great recipes!!! As a Spanish, I am quite used to see English people cook paella "their own style". I must say your paella is quite the same as I cook mine (I am vegan so I don't make seafood or meat paellas), and I don't always use saffron, so congratulations for a great and quite real recreation.     It might be cheaper to buy lemon juice in a bottle? In Sainsbury’s it’s in the aisle with all the baking stuff, and one bottle lasts us a couple of months and it costs about £1,5.

    I love how original these are! Usually when people put out budget videos - it's normally just potatoes and pasta. I'm especially keen to try that couscous salad and the paella.

    Hey! About the 'paella', you could use turmeric to give it the traditional yellow color and it also gives it a great flavor, in my opinion 😊

    Loved all the recipes :) it's great that you didn't add many strange things to the paella, however, if you are using Spanish rice, the paella should never be stirred after you add the stock. You let it simmer at high heat 5 minutes And then around 15 more and a low heat. if you see it's sticking to the pan, then add a little more stock, or you can leave the crust which in the valencian community is called "socarrat".

    A valencian would tell you that that's not a paella, it's rice with things :) it looks delicious anyway, I live in barcelona and we don't really use saffron that much either, it's quite expensive here as well. Artichokes and broad beans are the best in veggie rice with things if you can get them

      Madeleine Olivia its really cool you basically just put in the ingredients you wish to use and it lets you pick more in the categories "crunch", "bitterness", "sweet" etc and voila you have a full meal sometimes I might have to buy one extra thing to make it perfect but buying one thing versus 5-10 things is way cheaper obviously. Also good for people like me who hate shopping 😂

    I'm Spanish and I have a tip for you: don't stir your paella because the rice will release its starch and it will become creamier, sort of like a risotto, and it's not supposed to be like that! Apart from that, everything looks great! I love your channel 😊💛

    You could use pickled artichokes where you can get them cheap for a small jar of them for a dollar or two here in Canada you can even get them at the dollar store here.

    I have to be soy free, so will sub cashew or rice milk vs soy milk in all your recipes. Coconut Aminos vs Soy Sauce, solid regular or quinoa polenta slices/chunks, portobello mushrooms, chickpea in place of tofu in the savory recipes. And will sub sunbutter, pumpkin seed butter, tahini or cashew butter vs peanut butter.

    In Ireland, large Tesco has saffron. It is with all the Tesco branded spices. It is expensive, as far as I remember, it was between 5-6 euros.

    I think If you add a small onion to the third recipe it will make a huge difference, try to add regular onion instead of green onion or the both, onion goes very well with couscous.. nice video

    I know I’ve been out of the loop for a bit and you’ve might have already answered this question; how are you feeling? I know you were staying away from gluten etc cuz you were having some issues. Did you figure out what the issue was or did you just heal? Glad to see you being able to taste your own food again! Also, I see a difference in the quality of your videos (better!) not that they were bad before. Just a lot more crisp picture/video. Well done! Love and miss your recipe videos!

      Thank you! I am feeling a lot better. Realised my IBS flare up was due to stress so took time out for a lot of self care and have changed things up so I’m incorporating yoga, time off social media and time away from work! My symptoms have all gone away thankfully 😊

    Oh my goodness!!! Did you read my mind?! I've been thinking to myself often about making muesli and pb chocolate smoothies in the morning, making a nice mediterranean inspired gilling salad for lunch, and about making an easy healthy creamy pasta or a vegetable paella for dinner 😂 I am going away to university next week and I am going to try all of these before I leave!!! Love your channel so much, you continue to be one of my favorite TH-camrs, you are really inspiring the change! 💖✌😁

    Love the recipes and your channel. Would love to see a pantry staple video. I'm always missing some ingredients for your recipes. it would be nice to have a list of things I could shop for and have on hand to make delicious meals quickly.

    I just heard from a specialist I may have Crohn's or Celiac, so I have to cut out gluten for a little while while I'm waiting on the tests. I'm so glad you always have such a variety on your channel (and also that brown rice pasta is delish 😹)

      You may want to hold of on the nutritional yeast... it could cause you some discomfort...

    I love all these. I wish food was that cheap here. Fresh produce is so expensive. Even more so at the farmers market. I buy frozen and canned to try and feed the fam. We eat rice like 3 times a week😂

    So I made the creamy mushroom pasta and loved it! It was so windy and chilly today, this was exactly what I needed and also it was my first time trying tahini. It wasn't sure of it on its own but added to the pasta, it was very yummy! Can't wait to try another recipe xx

    New subbie, here! Really enjoying your content, attitude, and I wanted to share with everything something I just learned a week ago at a cooking class. Apparently we are advised to use the top edge of the knife, not the sharp end, to scrape up whatever is on the cutting board. It see,s that using the sharp end dulls the knife which actually makes it both less effective for cooking AND more dangerous. Good tp know, eh?
