Ok... So I just gave this a go... Got a nice dome... Non muddy. First try, I ruptured the filter with the chopstick. Second try, I was nervous and didn't quite agitate all of the grounds out of fear. Any tips to get that nice stir with no tearing?
The chopstick definitely takes practice. But we do stir all the way to the bottom it’s just about feeling it out. Always stir more Aggressively on top and then all the way to the bottom gently!
I like being able to use Kalita filters because a lot of the Hario ones result in stalled brews for me. Instead of stirring, I’ll just pick up the brewer and swirl it a few times.
The picking up to swirl is definitely easier with this one compared to v60! I think swirling causes a lot more choking too. Have you tried origami filter? Never choke. In general origami doesn’t choke much for us though!
Good luck , 🍀 I’m having the feeling you will win. You have a minimal style but very high quality ! Also escape from the “traditional “ . Best wishes teacher !
@@TALESCOFFEE any amazon brand in particular you recommend for the origami dripper? here in my country they are selling it at 80$ 😯 , rather amazon it .
I don’t think there are any currently any Amazon versions of the Origami. Where abouts are you? I could check shipping for you if it’s cheaper but I’m not sure if it is.

@@TALESCOFFEE Wait, you should run some tests IN A VIDEO. The last time you said that it was 25% EY or more. That so much higher than the typical EY at 24% as "ideal". No wonder I had amazing clarity with the single pour.
@@TALESCOFFEE We need to push further for the highest drinkable(as in no over-extract flavor) EY. If possible we should ALSO look for the highest EY while maintaining the highest clarity possoble without that "coffee flavor". I think we should also compare it to tricolate. Hey Vincent, i am wondering how can i tweak the technique to extract different acidity, sweetness and body. I have a coffee now that i believe appreciate a lighter body. Do you think i should use a higher ratio and coarser grind?
Hey! Hmm you can dilute with a bypass. I generally suggest sticking to a medium fine grind. If you want more body you want to pour tighter ratios and slower. For acidity and lighter body you want to pour faster in the middle. Remember to always start slow though!
@@TALESCOFFEE i am always starting slow now and i found a new way to brew a lower dose, i just need to compact (with my finger) a little bit the coffee bed
Yups! That’s what my kalita wave tamping idea is about. I think in the video I mentioned it, if you’re follow us on our Instagram I did do the compacting push with my finger for smaller brews! It works so well doesn’t it!
I’ve been following your channel for a while now. The content has been awesome. Unless I have missed it’d is there a video sharing about Tales coffee, it’s story, history, and how the shop is laid out/ philosophy of the shop/business?
Dose using a chopstick to make a little spiral bed before starting matter that much? I tried using this method and It causes some channeling during the brew. any suggestion?
I've tried it, but personally much prefer cones still. I don't like the flat bottom filters since the coffee bed size is still too shallow unless you brew a huge cup. It would only make sense IMO at least if you're brewing a coffee over 400+ mL
So I really struggle to get 18g of beans or more on a single pour with a 15:1 ratio. It doesn't seem to drip through quickly enough even though I'm pouring what feels painfully slow. I'd like to get up to 21g but it's just going to overflow. Am I just capped? Should I coarsen the grind?
If you’re struggling with flow rate then you should definitely go a little more coarse! Please send me a picture of the grinds before and after via Instagram if you’re still struggling!
I’m confused. In an earlier video, Vincent, you state the Kalita causes too much agitation, due to the wave-designed filter; however, here you’re praising the Origami because of its triangles? How does this cause less agitation than the Kalita? Also, I know you’re not a fan of flat-bottom drippers, but I also hear contradictory opinions, i.e., how flat-bottoms filters are superior? Thank you and keep up the great work!
The waves in the kalita filter stop the water from flowing or moving in a good direction/spin. But the origami triangles don’t actually have that issue since te paper filter sits over it still and the water flows very smoothly ^^
So the origami dripper small size is almost equal to the size of 02 V60? And can only the Kalita 155 filter be used or can the Filter 185 Kalita also be used?
It’s a bit smaller then the v60 02 between the 02 and 01. I never really use kalita ones, I only have the larger kalita filters rn. It works I guess? Not really a fan of flat bottoms whether in flat bottom dripper or in cone
For algo :) Also could you do a dark roast single pour? I had good results with iced but when i try a full cup i get overwhelming bitterness even as i drop brewing temp
Generally dark roasts will have the bitter and darker flavours. The oils are a strong indicator of it. But yups we definitely do. I even have a darker roast I did last night it’s like medium dark but if you follow on IG I can tag you when I brew it tomorrow!
