We never gave this a name in our Jujutsu, it was just part of the fact that you control where you end. Take someone down on their back and you could strike/stomp them and move on to the next attacker, or you could do a side submission (old days they weren't submissions but breaks) or roll him to his stomach if you wanted to go down with him and hold him there. Even on his stomach you could do an Aiki-style lock, or cuffing, or basic pin, or choke. All up to you. So I guess the in combat you have several techniques anyway: parring/ striking/take down/more striking and/or more controls or breaks.

Awesome video. I like seeing where you can go from a single kata.

I have used this principle, often in conjunction with the pronciple of "reverse flow" (ura nagare?), to increase the "disruption". I have found it especially usefull if the first technique for some reason only work half way and did not for get me the opponent where I wanted.
I have thought of this as a "chain of motion/steps" ("kata" if you will) that gets fork roads for each step in the chain where you can easily glide over to a different chain of steps (a different path/road if you will). As such you can, for each step, seamlessly stack techniques and easy glide between them creating a new "chain of step", constantly adapting to the ever changing situation.
This is to me one of the big benefits of excessive "henka" training where the focus is not on the actual variation of the waza/kata but rather the ability to quickly adapt. To build up "the forks"...
