It may not last as long as a board made with hardwoods but it's still a good idea I think. :)
The grain looks so good on the finished product! Probably looks even better in person. Is there ever a risk of it cupping again?
Yes it is slightly cupped but nothing some rubber feet can't solve! Helps it stay balanced
Is Making a Cutting Board from Pallets a Terrible Mistake? Kind of depends on what the pallet is made of, wouldn't you say? Hardwood = No - Steel = Yes

When he was man’s-planing all I could think was “you can tell it’s wood by the way that it is”.

No it isn't a good idea because of the wood treated with fungicide on some of the pallets
Is there a way you could test for that or would you just have to know the pallet manufacturers process?

The pallets have tags that say MB or HT. These tags will tell you if they are safe to use.
