bit depth and color space are dependent on what your TV can handle. I highly doubt your TV/monitor is 12-bit, there's also settings you have to adjust like picture mode (on TVs) to accommodate true 4:4:4 chroma (PC RGB color space)

You must have selected the wrong override option. If you're playing on a tv select hdmi or standard. Then you should get higher resolution options.
