This looks great, I make something similar. I add a dijon instead of lemon juice, a little bit of turmeric for colour and garlic and onion granules, but will try it this way next time I make it! Thank You!!

Only green onion, that's interesting. I'd also throw a cut up bell pepper, some black beans, corn, and spinach in there too, just to give it more flavors. This looks good, it's consistency is perfect, I guess I need to try to put starch in mine, that might've been where I went wrong, it came out as more of a sauce, it wasn't really sticky at all

I believe you can put spoonfuls of it in cold ice water to harden for a few moments and then refrigerate the small round of cheese to use later.

Yeah, the combination of both starch makes you get this consistency. I hope you enjoy it anyway :)
Looks interesting! But is there a substitute for the yeast? I cannot have yeast, or anything fermented like vinegar, etc.
Then just omit it! The yeast is to give it cheezy taste. :)

You can use any other flour for thickness but it will not have the same consistency. The cheese texture is due to the starches :)
