    Great ideas!!! Them burgers look good!!! I cooked up a package of thick cut bacon on a cast iron griddle, in my kettle grill the other day, having used alot of apple wood chips mixed in lump charcoal. Started on the cool side bailed out the bacon greese and moved it to the hot side. It was the best bacon i ever had. Love your videos!!! Great information!!!

      Bacon that you smoke yourself is going to be better than store-bought smoke. Most of the time, if a bacon says it's "smoked", it's because they used liquid smoke in the cure. When you actually take the time to smoke it like that, it's fantastic. Thanks!

      Hello! Yeah, I like to actually walk through a cook and talk about the food, the smoker, the weather. Just a normal day. I think there are tons of places people can go if they just want to see seasoning or brisket trim. Heck, there are plenty of people that are way better than me at trimming a brisket. Glad you’re enjoying. I’ll take you at your word on being wicked smart: I don’t have any standardized tests on hand to validate :)

    Pro tip: to get a flat burger without smashing, form patties like a red blood cell, with a dip in the middle. The center still expands, but just to the point that it's level with the edges.

    I think your internal monologue filter device is broken. You said the quiet part out loud. I’m not going to disagree with you, but I also can’t be seen agreeing with these statements in a public forum. I’m not emotionally prepared for the negativity that could be cast in my direction. I applaud and envy your courage!

      I understand. I've got a big problem saying the quiet part out loud. Honestly, I've just gotten to the point where I see all these lists of "the best burgers" and they're all 300 feet tall and require a chainsaw to cut up. The hamburger is a simple meal, the onion burger is a great form of it. I love smoke, but I love the flatter patties. It's a complex relationship, but I'm coping :)
