In Guyana we make something like this but it's name potato bake/aloo bake and it's shaped round and fried. It's one of my favourite Guyanese food. Nice recipe though. Can I ask where you're living?

I use pimento peppers for flavour, they are not hot but carry a lot of flavour. For heat I use either Congo pepper which has nice heat and flavour. I also scorpion pepper, this is pure heat if you like hot and spicy food. I always like to add pimento even when adding hot pepper because it give more depth and flavour to the dish. Hope this helps!
