Been doing a lot of research, lots of manufacturers. Was leaning towards Pitts & Spitts which are nicely made but am now leaning towards Gator.

That's the FIRST pit I've ever seen that did not have any leakage. I'm in the market for my first offset smoker. So far, I'm leaning towards Gator. I've been looking for a cooking video on a Gator Pit....very impressed with what I've seen so far.

Awesome video, it really did show the quality of your pit... i couldn't tell if you added any wood after you did the gas assist or not.. so fire management video would be great.. and was your side kick loaded :) at the end, awesome either way.. thanks
David, thanks for the compliment. I add a stick about every 1.5 hours. So we added one stick once, maybe twice during this cooking video. Started with three or 4 sticks on the initial fire up. Then one stick, possibly two over the 5-6 hours we cooked the meat. Extremely fuel efficient for a large Offset. Kirk was feeling good at the end. LOL Hey, Meat, Fire, Beer goes together.
Gator Pit
why is it that some people, like you cook with nothing but wood and the food has good flavor, but when i cook with coal and i add like 2 or 3 chunks, why does that food kill the taste of my food but not yours....do you finance any of your pits
yoyo manz Wood adds more flavor to the meat. Cooking primarily with charcoal and adding wood chips or small chunks of wood will not be the same as all wood splits. Little wood is still better flavor than no wood at all. Try wood only and cook low and slow. 225 to 250 degrees. Hope that answers your question. Ritch

Thought about. Just haven't had the time to sit down and design one. I am sure we will come out with a Pellet Cooker in the future. It will be Gator Pit heavy duty 1/4" thick construction. Ritch
wish i had a gator pit for our superbowl party, but since im only 15 i don't have the money for one. guess il have to make due with my charbroil 820 instead :/ (yes it's mine, i bought it with my own money for my birthday last year, and have been smoking meat for 4 years)
Tristen, you can turn our great Q on your Charbroil 820. You just have to "master" your pit. Hence "Pitmaster". I used to cook on Old Smokey grills as a kid. Let me tell you, I didn't see anyone spitting out my food back then. Keep cooking. Smoke On. Ritch
true, but the quality just isn't there with my pit. nearly falling over, wheel is coming off, very bad leak in the chamber door. can't wait to get the money for a gator pit though. for the superbowl, everybody's eyes opened up wide and i got lots of praise for my brisket and ribs haha. nobody ever spit out my bbq either.

Yes, we do just toss a log in. Depending on what is burning inside, may determine the position of the log we toss in.

Suspect the $100 offset smoker I saw at the hardware store is a lot harder to maintain temperature on.
2 Questions...
1. Why do you have the exhaust vent tube near the top rather than at grill level, and why do you choose a square tube rather than round pipe?
2. Why do you place your temp gauges way high u p rather than near grill grate level.
Your build quality is absolutely excellent, love the slide out racks. The no leakage comment is big.

No doubt Gator makes good pits. I just wish they would evolve from designs other than offset smokers. A small footprint vertical smoker like Pitmakers safe smoker would be nice.

Question.. What is this type of smoker on your website call?
(1). What are the exact dimensions of "your" smoker including the dimensions of your firebox?
(2). I noticed most of the "stick smokers" on your website tend to be 24" in diameter, is there a particular philosophy that you have regarding "this" size diameter?
(3). And are there any future plans to make a video demonstrating how "you" season your pits?
Main: 2448. Firebox: 2424. We are always coming out with new videos. Sure we will have a "seasoning" video in the future. Most customer order the 24" diameter more for the food tray clearance between the trays and the depth. The larger, the easier it is to fit full racks of ribs and larger cuts of meat that require height (butts, briskets, whole birds).

Hi Ritch, I love your videos. If you always leave the firebox and smoke stack completely open, how do you achieve low and slow at 225? I know once you stated fire management in the video, is it as simple as just choosing a small piece of wood log vs. a big piece of wood log? If so what size logs do you use to achieve 225, 250, and 275?
Greg Jones: You have to learn what your specific cooker will take to maintain a certain temperature range or average. All cookers are different. Size, design, etc. Yes, wood makes a difference. As you see, I leave my stack and air vents fully open. That allows a cleaner burning fire. Also, I have our Tuning Plate design in this cooker. That makes a world of difference in maintaining temperature where you want. It is a combination of factors: Overall pit design, wood selection, air, weather, and many more. You really just have to learn your pit. Only way to learn your pit is COOK and COOK and COOK in all weather conditions. Experiment while cooking. Try different things and see how your cooker reacts. There is no one way I can tell you how to cook that will give you consistent results. Experience will do that for you. Enjoy, Ritch Robin
As you stated, maintain a smoking temperature between 225-275. That averages out to 250 overall. I like to start out high at 275 and then maintain a 250. Why? Because I am about to put some cold meat in. Over time the pit will drop to 235 and I will add one log. That will bring it back up to around 275. Let it drop again over the next 1.5 hours average and add one log again. Pretty simple on these custom Gators. They make it easy, as I stated. Not working your tail off working the cooker or fighting the firebox. Fire it up, put meat on, go play for an hour or two. All will be fine when you get back, check it, and add that one log. :)
