    We checked out of the RV and checked into a Dar in the Fez Medina. We were treated to a great cooking class for couscous and had an amazing Medina tour that included a rug making lesson.

      Thanks so much Youssef! We do work hard on these as we have yet to see a vlog that shows this country the way that we think it should be showed. As not just a vacation destination, but a place with an incredible people and culture that should be experienced.     Hi guys !! I'm moroccan, I've been binge watching your videos for a couple of days now, and I am obsessed with how positive you guys are about other cultures ! Keep that attitude and you will encounter nothing but smiles and happy faces in your path !
    Quick rectifications I must make to some Intel I've seen shared on this video, some things got lost in translation I believe :
    1) $100K will not buy a property like that in fes. It would sell for about twice that much if not more depending on the location of the property and the state of it.
    2)The "Goat" butter is actually cultured fermented salted cow's milk butter, called S'men, it's a moroccan specialty and staple in our pantries. It has a very pungent blue cheese aroma, and is only found in Morocco. Get some while you're here ! It works fantastically in pasta dishes where you want to add that umph of umami only aged cheeses can make. Use it with moderation, 1/2 a tsp goes a long way in almost any recipe for 3 to 4 servings (that is if you get the aged kind from specialized sellers in fes)
    3) There is no cumin in couscous. Everrrrrrrrrr....
    Also, let me know if and when you'll be around next time, I'd like to take you guys some place you've never been before ... I hope you'll like it

      It was so cool to be there, but the smell was horrendous. That slaughter house smell was no joke. Ha. Mariom the lady who taught us to cook was so special and patient. Amazing times.

      We were lost in that space! Unfortunately, we were all still a bit sick so some of the couscous went to waste. Would love some right now. I must confess we bought 3 small carpets in Chef. Now we just need a place to put them. Ha.

    -Moroccan people is the second most kindnest and welcoming people in the world According to the international Organization
    for Tourism, for scams it's every where in the world like turky and other countries
    -Moroccan people in one of the most tolerant civilisation and people in the world, jewish people live mix with from centuries thez was 20%
    -Morocco is a just 15 km from Spain, you cans see spain in the other side just with your eyes yes it's not a joke lol
    -Morocco has a snow cities too :) like switzerland, Azrou city and Ifran it's not a joke too :) with ski station monkeys and more
    -Morocco has more than 300 shining days per years.happy things for british beacaus in uk it's rain all the day every where and every time lool ;)

    -Moroccan people speak spanish in the north, in the south too and speak french and some english in the middle of the country

    -Empire of morocco was the most peaceful and beautiful civilisation in the world the Andalus civilisation and he still always tollerant
    -all that famous monuments and ruins in spain like Elhambra palace, mosque-cathedral of Cordoba, mosque-cathedral la ghiralda
    are bult by moroccan emperor. for expl only Elhambra palace bring 2 millions visitors per year,it takes 150 years to built
    -So all that historical monuments and south of spain who bring the half of thoses 60 million tourists per year are arabo-Moroccan :)
    -Morocco has one of the most richest culture in the world like three civilisation mixed in one :) the same for the nature
    five continant in one but is not yet economicly devlopped like turky
    -the secret service of Morocco who find the location and hiden and the home of ben laden and share his information with usa
    -food and taxi is very cheap in morocco, for expl you take 3 hrs train for 13$ from casa to marrakech but in usa or canada
    you pay 130$ for the same distance, you can take a taxi for 2 dollars but in usa or canada 25$ and you can eat best food for 5$ but in usa or canada 50$
    -just 20% of artisanal products are buyung by toursit and 80% by the local people sadly thoses nice product needs some push. peace and love

Those born in the 50's were the teachers and government employees who reconstructed and established the Moroccan institutions and built the dams(that saved us from severe drought season) many of us enjoy now...calling them analphabet says a lot about you.

    Taznakht's Berber carpet is by far my favourite in, the world, and if you're outside morocco Ghee works just as well for couscous

      We only had a short time in Chef and we were still not feeling great so we kept it very low key, but that just means we need another visit in the future.

      Akchour is very near to chefchawen , you are going to love it , with the amazing landscape and the huge waterfalls , tap in google "Paradis perdu Akchour"( which means the lost paradise ) to understand what i m talking about :) have a nice trip

    If you're going back to Europe through Ceuta, take a quick look at Martil and M'diq they'll be on your way... Very different from what you've seen in Morocco till now

    Also you need to try other foods! Look for pastilla (or bastila) , try to taste kerine (cow feet prepared the moroccan way), try moroccan soups like harira and shorba too if you have the time or the opportunity to do so! You won't regret it

      Yes the smell is soo bad because it is untreated cow skin before being transformed into leather... This job is soooooo hard and very underpaid in Fez

      zahid ismaili not a problem at all. He has learned to say “i am a boy” in a lot of languages. He loves his hair and does not care if people mistake him for a girl. He is himself so don’t feel bad at all. He just tells people “im a cool boy!” Ha, so cute!

    Wow guys..another winner video! 👍👍 was in Roatan with spotty wifi so didn’t get to finish your livestream but will. I had the same feeling leaving Morocco - it really captures your heart and soul. When I was there I found some beautiful beaches..did you visit any? Can you say where you’re going in Portugal? I liked Coimbra very much..is it on your radar?

      Thanks Mishu. Love Roatan, was there years ago on a cruise. We definitely want to go back. We will start outside of Lisbon and then head north. Unfortunately, we won't have a ton of time in P because we stayed so long in Morocco. Any other recommendations?

      Jessica Sueiro Since you do such fabulous tours I might suggest Porto to see how Port is made. Portugal has come very far in their wine production to the point that often when I was in a restaurant the waiters recommended by region not by type. You must must must have grilled chicken made in the traditional way. Some of the best chicken (wow Roatans know how to grill chicken!) anywhere. Jess there is a small restaurant in the old south end of PDC where the French owner learned how to make this Portuguese chicken. Next time you are in the area you must try it. Small, great value...some good french baking as well 😋). Of course my heart belongs to the Azores..keep it on your bucket list. I will be returning and I rarely say that! Roatan requires a return as well! 👍👍

      We went to Assillah, but we were only there a couple of days and we had a ton of work so we barely left the camping car, too bad. Next time we will stay longer.

    What is the going rate $ for a guide for maybe half day,4 hours?

      In Fez - It depends, our guide came recommended so we paid more than the average rate. It this point, I forget what we paid him. but I think you can get one for about 600-800 dirham.

    Warning!!!
    Please don't use cumin in couscous...it will taste WROOOOOONG and BAD! I think she put the cumin in the peppers' dish (taktouka). Use black pepper for couscous, NEVER CUMIN!
    P.S:
    The calramelized onions and raisins on top of the couccous is called t'faya.

      "Chef' shaaaaaa wn", this is how you pronounce Chefchaouen. Or, if you want to sound more like a local just "shaaaaa wn" and stress the "sh" sound.

    this is not the original way of making couscous ,we don't use pression marmite and pan , couscous need time over 3 hours so we make it in that specific cooking pot , we mix vegetebale and meet below and semolina in the top ,
    we may use pan to caramelized rainsins and onions

      Smen is salted cow butter , it adds a special taste to different moroccan dishes not just couscous .

    AM I missing something ? No one offer to help to Cut,/ slice anything ? The lady just cook on her own while Everyone else Just Watch ? My understanding from Moroccans is that coucous is a very time consuming dish , the grains must be fluff very frequently to be loosen. Noticed that There's No blenders or slicer ? Everything were Cut / slice by hand
    Her hair is very distracting to Watch . . . So I cannot finish the entire video

      We did help chop, but we did not shoot when we helped and we can't show it all on the vlog. It is just Will and I shooting, but if we had a team with us I can guarantee I would be there chopping the whole time. Life goals. Ha.
      Our goal was to learn about the cooking and share it with the world and hopefully get her more business. And yes, it was all chopped by hand, she was good with the knife.
      Oh no, if you are referring to the pink hair, well, it is here to stay. I love my pink!
