Did you know you can use your blender or mixer to make butter. Much faster and not as hard. I love homemade butter. It tastes much fresher than the butter in the stores. So proud of you all for trying to do as much as you can to feed your family safely. God bless you all.
I have really rocky soil and have never been able to grow carrots until hubby built me some raised beds last year. The difference in flavor is AMAZING. So good.
When we made butter from our cow, we actually used a loaf pan and parchment paper and only filled it about 2 inches high. Then for long term storage, we wrapped well and put it in the freezer. We had homemade for over a year after we got rid of our cow
I used to mix carrot seeds and radish seeds together, then sow them. The radishes grew fast, so when you harvested them, you were also thinning the carrots at the same time!
Get a potato scrubber!!!!! They are amazing for washing root vegetables and removes the need to peel if you use it properly and wastes less carrots!!!!!!
Hey - tiny seeds can go in a salt shaker to shake out. - I can’t remember which video I saw that in - i think it was for seeding poppy seeds. Edit- too bad you didn’t save the old fridge - you can dig a hole & lay the fridge in - small root cellar - i think you can do that with food grade barrels as well. Videos are out there.

He inherited his allotments from his father, who inherited them from his father. Go all the way back to the first world war, growing vegetables in the same plots.
Your carrots look so pretty in the jars. If you have a rocking chair, or you can sit on the couch or regular chair, put the cream in the jar and lid. Years ago I learned a method for sowing tiny seeds that works every time. If this were liquid, you'd be diluting it. Use some kind of powdered herb - black pepper works fine - mix a pinch of seeds into about a half teaspoon of herb powder and mix it together well. Then, each pinch of the mixture will only contain a few seeds and you can sprinkle them evenly over the surface.
The main thing is you have canned carrots, that YOU grew! Well explained! Great job! I just watched a Roots and Refuge video. Turkey day in May it's called. They got some Turkeys. They gave a Shout Out to you all !! At about 9:00 minutes in they were taking the Turkeys out of the box. They love you guys! So do we! GOD bless
THINNING TIP: I struggle with growing carrots .... a few years, we did great. a few years, we did poorly. a few years, we had mole troubles. UGH. But the thinning....instead of pulling the ones you want to remove. When the seedlings are 2 - 4 inches tall on top, cut them off with scissors at ground level. It disturbs less. Love you guys.
I had wayyy better luck growing carrots by seeding them then covering them in burlap (I used a coffee sack) or whatever kinda fabric you don’t mind getting dirty, and soaking that fabric and leaving it till the seed leaves come out. (Just in case anyone else is in the South or have issues with drying out before they germinate!) Game changer!
we LOVE our canned carrots. i do 1/3 of mine normal.. 1/3 with garlic , and 1/3 with our onion soup mix for a nice roasted carrot flavor. the garlic one's we use for candied carrots after opening. way better then canned carrots from store eh? and open a jar and poof mash for a carrot casserole. half the works done . enjoyed our visit. interesting how you made goat butter.
I am in NWFL and usually ginger is grown in the ground here. I bought some last fall from a local grower. It was in a small pot so I just put it in a very large pot and kept it covered when we had freezing temps. The green tops did die back but they are just now growing again. My point is, grow ginger in a large planter in your green house!
use a dry teflonpan scrubby after soaking the carrots for a few minutes to get the dirt off all those ridges, then peel if you want. I usually leave the peels on, thats where most of the vitamins are. I hope this helps. I use them on all my root veggies.
I'm in sw TN and sow mine February 21 on my daughters birthday, and harvest june 27th on my moms birthday. I pulled a few last week and they were about 4-6inches long. Last year they were like 2-3 inches long...but now I know, I didnt let them stay long enough in the ground, so mid june ish it is!! They could have stayed through that frost since they are cold weather. Mine did fine, low around 38 I believe, uncovered.

Jenn, I think I heard you say you wanted to raise ginger. I am this year and turmeric as well. I am in zone 7a and got the starts from Fruition seeds they have seeds for more northern climates as well. Think winter growing.. all my ginger is doing well and waiting to move outdoors. If you catch the cream directly in the bowl from the stand mixer, you can just turn that on and it’ll make the butter for you - no shaking necessary, and less dishes!
Hey no judgement cause my climate is extremely cold (zone 2) but I’ve never dug a trench for carrots… Just sprinkle them on the top of the soil and then sprinkle a little bit of soil on top of them… If they’re that deep they’re not making it to the surface before they run out of energy. Amazing on a baked potato or on top of a grilled steak. You can had so many combos of seasonings to butter to enhance it. Just remember to label it. Great video!

I washed mine and crammed as many as I could fit it the crisper part of the fridge and they lasted months! Just an idea.. could save a bit of work. Then you also have fresh carrots on hand :)
Monty Don recommends mixing carrot seed into a bit of sand to sow it, because the sand thins the flow out and makes it easier to see exactly where the seed is hitting the ground, and you have to thin less. FYI Ive never grown carrots, so ive not tested it!
I've never had or made goat butter, thanks! As for pressure canning, I was told however long it takes to process, that's how long it takes to cool. This is why I have 2 canners 😁. But it's all worth all the work!

You need the $20 peeling tool made by Paderno. I got mine off of Ebay. I peeled about 50 lbs of average size carrots in 1 hour. This plastic peeler clamps to your work surface and is manually operated. You just push the carrots in one end and they drop out the other end. It peels a little thicker than a regular hand held peeler, but the time savings are so worth it. My chickens got the peels. (Next time, I want to try dehydrating the peels then powdering them.) Also, try carrot seed tapes. They are a little more expensive, but no thinning and easier to plant!
I have never tried this but a friend of mine puts her seeds on damp toilet paper, carefully rolls them up and plants her tiny seeds that way. She doesn't have to thin later. The paper just composes.
Second comment. Many people have trouble with carrots that aren't orange. We just broad spread ours & really very little thinning on our part. Here in West-Central INDIANA FARMLAND 🇺🇸❤️ they grow really good.

Back in the late 60’s one of my Saturday chores was to shake cream in a gallon jug to make cows butter. Mama would grate a carrot for the juice to add to the butter for color. Her butter dish had a pretty emblem on the bottom to make a pretty butter patty. Thanks for bringing back a wonderful memory to me. So just a question. I have not done root veggies. I see water boiling in jars around carrots. When you go to use are they mushy and do you cook or roast as you would normally? I know silly questions but if you don’t ask will never know. 💝🇨🇦
I’ve not made goat’s milk butter but I have made cows milk butter and I just throw it in the food processor and bam less than 5 minutes you have butter I would imagine it would work for goat cream as well!!

I've always water bathed my carrots, actually all my veggies are water bathed. Never any problems and always good. Its the way I was taught. I always can my butter in small jelly jars.
Peggy Sue Whoa! I am definitely not a canning nazi, but you are really playing with fire by canning low acid foods in a water bath canner. Low acid foods need to be canned in a pressure canner, which gets much hotter.
We are.trying carrots one more time this year. We mixed compost, potting soil and sand together in a big water trough. Crossing our fingers! Keep up with the great videos, we have been inspired to start our own channel from the great homestead videos we see.
I think this is why people dont can them typically. Have you guys considered fermenting or even better some form of root cellar. I realize this would be different than how we do it up north, but some kind of root celler for down south?
My brother in law does a garden numerous times of the year, We live in Louisiana, so he can do this, he knows what he is going to plant when the other is done, we have the boxes, he built, he has never had any luck with carrots, he has tried numerous times, he has been able to plant just about everything but that.
Zac you need to find from an closed hardware store a paint shaking machine. THEY WORK AMAZING TO SHAKE CREAM TO MAKE BUTTER. With a little adjusting you have a butter shaking machine. Yep it works just make sure you get a container & a lid that seals tight that can handle all that shaking. My Dad used his for many things not just mixing paint at home. GOD'S BLESSINGS ✝️💖🙌😇🙏🇺🇸
My father-in- law didn’t believe me on not touching vegetables or canning vegetables at that time of the month so I helped them pick up potatoes out of the garden and I told him to keep them separate from the others so he did and they all rotted and he said I couldn’t help in his garden anymore. 😂
I dont think they need light for germination so covering with cardboard or anything would make germinate, but dont cover for too many days. Very high humidity.
Dishwashers are only good for storing dishes. I have had many in my life time and none compare to good old handwashing. And mastering the art of stacking dishes in a drainer is priceless. ❤️🤗
So I noticed and it may have just not been shown, but did you wash the butter? I know from my experience with making butter, we washed it in cool water before storing it, and used the butter milk from it.
I think I would have done smaller jars so that I got more jars, same amount in the end but could have lasted a little longer, I would do it that way for myself only because I rarely eat carrots for a side veg, I usually eat them in something like soups, pot pies, Shepard’s pies, something like that, good job though! It has to be so satisfactory to know you grew all them from seed and put all that food in your pantry! I need to buy a pressure canner
As a young teenager I used to make cow's milk butter, that is some bright yellow butter. I didnt know goat butter is white, we used to wash out all the buttermilk and I noticed you didnt, is goat butter different then cows butter?

Zone 4. Plant the same way you do. I sprinkle thin layer of grass clippings or my soil will dry out or the seeds will wash away

I cover with clear plastic or bubble wrap for a couple of days. I also cut holes in between bubbles or in the plastic wrap for air.

I've always water bathed my carrots, actually all my veggies are water bathed. Never any problems and always good. Its the way I was taught. I always can my butter in small jelly jars.
Peggy Sue Whoa! I am definitely not a canning nazi, but you are really playing with fire by canning low acid foods in a water bath canner. Low acid foods need to be canned in a pressure canner, which gets much hotter.
We are.trying carrots one more time this year. We mixed compost, potting soil and sand together in a big water trough. Crossing our fingers!

I think this is why people dont can them typically. Have you guys considered fermenting or even better some form of root cellar. I realize this would be different than how we do it up north, but some kind of root celler for down south?
My brother in law does a garden numerous times of the year, We live in Louisiana, so he can do this, he knows what he is going to plant when the other is done, we have the boxes, he built, he has never had any luck with carrots, he has tried numerous times, he has been able to plant just about everything but that.

Zac you need to find from an closed hardware store a paint shaking machine. THEY WORK AMAZING TO SHAKE CREAM TO MAKE BUTTER. With a little adjusting you have a butter shaking machine. Yep it works just make sure you get a container & a lid that seals tight that can handle all that shaking. My Dad used his for many things not just mixing paint at home.

My father-in- law didn’t believe me on not touching vegetables or canning vegetables at that time of the month so I helped them pick up potatoes out of the garden and I told him to keep them separate from the others so he did and they all rotted and he said I couldn’t help in his garden anymore. 😂

I dont think they need light for germination so covering with cardboard or anything would make germinate, but dont cover for too many days. Very high humidity.
Dishwashers are only good for storing dishes. I have had many in my life time and none compare to good old handwashing. And mastering the art of stacking dishes in a drainer is priceless. ❤️🤗

So I noticed and it may have just not been shown, but did you wash the butter? I know from my experience with making butter, we washed it in cool water before storing it, and used the butter milk from it.
I think I would have done smaller jars so that I got more jars, same amount in the end but could have lasted a little longer, I would do it that way for myself only because I rarely eat carrots for a side veg, I usually eat them in something like soups, pot pies, Shepard’s pies, something like that, good job though! It has to be so satisfactory to know you grew all them from seed and put all that food in your pantry! I need to buy a pressure canner

As a young teenager I used to make cow's milk butter, that is some bright yellow butter. I didnt know goat butter is white, we used to wash out all the buttermilk and I noticed you didnt, is goat butter different then cows butter?
