Maybe everytime player dies, the new timeline is created where player continues to play. Then, according to this assumption, Sans can win by protecting his own world, but if the player won't give up, one of parallel sanses would eventually lose and his world will be destroyed
This is a way of understanding what sans was going through when this happened, saddened by a child that was lost in a world that it didnt understand but still it wanted to kill everything it saw but still one of the messed up things it just wanted to wanted to kill kill kill and sans tried to stop it. But failed. That monster killed everyone there and still wanted more, but sadly sans failed and it costed the lives of all people there. So depressing.
