We'll have to use sign conventions,yes . If you want to understand why we use it twice(i.e., once while deriving the equation and for the second time when solving problems), there's a video by Khan Academy that explains the exact same thing as well:)

What you claim to be a general formula is obtained by applying the sign convention (taking u to be negative) and then when you derive the lensmakers formula you substitute the virtual object distance ( which is on the positive side according to your sign convention) without changing the sign. I'm sorry if I'm not clear enough!!

For example, when solving a numerical, we want a formula specific to that particular numerical (for example, convex lens). So we take our formula (which is a general formula) and apply signs while substituting. Another example is while deriving things. When you derive a formula (like in this video) you derive for a specific case (like convex surface and the object being in the rare medium giving real images - like in this video). Again to convert this specific formula to general formula we apply sign convention. Hope this helps :). Please feel free to ask more doubts
