Well, we've listened to 3 live versions and all of them sound like "he". The meaning of that line we could debate all day I guess, but a gentleman would stand up when a lady leaves the table in times gone by. On that version I think the first one has a cymbal (possibly hi-hat) sound just as that word is being sung, adding an extra 'sss' sound to the word. They are correct. The lyrics are a descant/melody that is sung over the backing vocals.
