This looks good to me because I like the Italian Carbonara recipe with bacon, eggs and Parmesan cheese quite a lot ( I do completely leave out the cream though). I also don't understand the critics of this recipe that call it unhealthy. These are all good quality ingredients and Italians are among the people with the longest life expectancy in the world. You just have to portion it appropriately. For me the only problem is my carnivorous mind. I would probably always opt for the bacon option that I know and love. I will add it to my recipe book in the vegetarian section though. Could come in handy for visitors. Probably wouldn't have thought on my own to make a vegetarian Carbonara like this. Organic farms do use pesticides too, actually you should always wash anything from a real organic farm because contamination is a real problem (IIRC there has been over a dozen outbreaks from organic produce).
This would be even more amazing without the pistachios imo. Needs a little roasted garlic and bacon to go with the lemon to make it stellar imo. Great work though!

or maybe not salt cause cheese will add the salty taste but i need some pepper

Proper Italian parmesan is made with calf rennet which would make this dish non-vegetarian. Looks delicious though.
