Soft cranberry scones - tea buns without yeast. Baking for tea.

  • Soft, tender and flavorful, cranberry scones are very similar to soft shortbread cookies or small buns without yeast.
    Ingredients:
    250 g flour
    100 g sugar
    2+1/2 teaspoons baking powder
    1/2 teaspoon salt
    zest of 1 orange
    113 g very cold butter
    120 ml - cold heavy cream
    1 cold egg
    125 g dried sweet cranberries
    To decorate the top:
    1 tsp cream for brushing
    1 tsp coarse sugar
    Place the scones in the refrigerator for at least 20-25 minutes before baking!
    Bake at 400F (~200C) - 20-25 minutes or until light golden brown.
    Let cool on the baking sheet for a few minutes before serving.
